1 c Flour
1 lg Onion, chopped
2 tb (rounded) baking powder
4 Eggs
2 ts Salt
1 13 oz. can evaporated milk

Join us as we cook up the days catch. We will Grill up some Mangrove Snapper on the Sportsman's Grill and deep fry some Homemade Oyster Hush Puppies on some cast iron.
This day on the water was very hard to film because it was rough conditions. We tried to film more of the catching, but it just didn't happen because of the weather.

Dixie Crossroads inspired corn fritters! We love Dixie Crossroads in Titusville Fl. It was our favorite seafood restaurant when we lived in Florida. The corn fritters were always fresh hot and melt in your mouth good. When we decided to do seafood this week, it came up several times we needed to find the recipe for the Dixie Crossroads corn fritter recipe and it is readily available on the internet. The difference in most corn fritter recipes and this one is the clarified butter. It is an extra step I thought was well worth it.
vegetable oil for frying in a dutch oven or a cast iron skillet
2 cups flour
1 tbsp baking powder
1/2 tsp salt
4 tbsp sugar
2 eggs, beaten
1 cup milk
4 tablespoons clarified butter
1 cup whole corn, drained
powdered sugar immediately after removing from oil.
Heat cooking oil to approximately 350 degrees.
Sift together flour, baking powder, salt and sugar. Combine eggs, milk and clarified butter. Fold egg mixture into dry ingredients. Add corn last.
When heat has reached 350 degrees, Drop wet mixture into hot oil and deep fry about 5 minutes, turning periodically or until golden brown. Sprinkle with powdered sugar and serve delicious y'all!
