How To make North Carolina Hush Puppies
1 c Corn meal
1/4 ts Soda
1 tb Flour
1/4 ts Salt
1 t Sugar
1/2 c Buttermilk
*note
1/4 c Water
1 Egg :
beaten
Mix all dry ingredients together. Then add egg, buttermilk, and water. Drop by spoonful into hot deep fat. Fry to a golden brown. (If a deep pot is used, the hushpuppy will float to the top when done). *NOTE: If you don't want to buy buttermilk, substitute 1/2 c. milk with 1 T. lemon juice added. Stir and let it sit for 5 minutes. It works just as well. Please note: You can make variations of this recipe in several ways: i.e., 1/4 c. finely chopped onion, less sugar, etc. But, at the coast of NC the above type recipe is usually served. OLD SCHOOL HUSH PUPPIES
Here is a simple delicious recipe for my homemade hush puppies, crispy fried catfish with creamy lemony tartar sauce
RECIPE
Season catfish with salt and pepper
Coat with your favorite breading (i use louisana fish breading)
Fry until golden brown and crispy
Serve with old school tartar sauce
TARTAR SAUCE RECIPE
2 cups mayonnaise
1/4 cup sweet relish
Salt and pepper to taste
1 tablespoon fresh lemon juice
HUSH PUPPIES RECIPE
1/2 cup flour
1 cup yellow corn meal
1 egg
1 tablespoon diced onions
1 tsp salt
1 tsp baking powder
1/4 cup vegetable oil
1 tablespoon granulated sugar
1/2 cups whole milk
Mix all ingredients together n bowl
Let rest for 15 minutes
Scoop and fry in 350 degree oil until golden brown
Mix all ingredients together and enjoy

Crab Hushpuppies Recipe
1 cup of self rising white cornmeal1/2 cup all-purpose flour1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon of Cajun seasoning 1 small onion, grated 1/4 teaspoon baking powder1/4 teaspoon baking soda1/2 cup finely diced red bell peppers 1 green onion, finely chopped 1 large egg, lightly beaten 1/4 cup buttermilk 1/2 cup beer8 oz of lump crab meatOil for frying
In a large bowl, stir together cornmeal, flour, sugar, salt, cajun seasoning, grated onion, baking powder, baking soda, red pepper and green onions.
Add beaten egg, buttermilk, and beer and stir to mix.
Gently mix in crab meat and let the mixture sit for 15 minutes.
Heat oil to 350 degrees and drop Carter by the tablespoonful into hot oil.
Fry for 2 to 3 minutes. Remove to a paper towel-lined plate. Serve with remoulade sauce.
