How To make Peppermint Fudge Squares
2/3 c Evaporated milk
1 2/3 c Sugar
2 tb Butter
1/2 ts Salt
2 c Marshmallows (mini's)
1 1/2 c Chocolate chips
1/2 ts Peppermint extract
1/2 c Chopped walnuts
Mix milk, sugar, butter and salt in a pot. Bring to a full boil, then boil for 5 minutes stirring constantly. Remove from heat. Add marshmallows, chocolate chips, flavoring and walnuts. Stir vigorously until marshmallows are melted and thoroughly blended. Pour into 8 inch square pan. Chill. Makes about 2 pounds. Origin: My Mom, Shirley Whittaker, Richmond B.C. Canada. This mint chocolate fudge is the perfect homemade sweet treat! A simple and quick candy that is made from scratch with a handful of ingredients: white chocolate chips melted with green food coloring then combined with sweetened condensed milk, milk chocolate chips, and mint extract, before being layered and swirled. The result is a rich, creamy fudge that melts in your mouth.

INGREDIENTS
2 cups white chocolate chips
14 ounce can sweetened condensed milk
1 cup milk chocolate chips
1 teaspoon mint extract (add ½ teaspoon more if you like more mint flavor)
Green food coloring
INSTRUCTIONS
Line an 8x8 pan with foil and spray with nonstick spray. Set aside.
In a medium saucepan over low heat melt the white chocolate chips with the sweetened condensed milk until smooth and creamy.
Remove from heat and stir in the mint extract and add the green food coloring to the desired tint of green. Leave in the pan to keep warm and pourable.
In a medium-size saucepan over LOW heat melt the milk chocolate chips.
Pour the green mint fudge into the bottom of the prepared pan but hold back about ¾ cup (just leave it in the pan).
Drizzle the chocolate mixture onto the mint mixture in the prepared pan in a random pattern. Using a knife or wooden skewer make a swirl pattern in the fudge.
Drizzle the remaining green fudge on top of the swirled fudge and swirl again!
Refrigerate uncovered for 3-4 hours until set.
Remove the fudge from the pan and peel the foil back. Cut into squares to serve!

White Chocolate Peppermint Fudge -- Lynn's Recipes
Lynn demonstrates how to make White Chocolate Peppermint Fudge. This is a great candy to have for the Holidays and Christmas.
¼ cup softened, butter
2 cups sugar
½ cup sour cream
12 squares (1 ounce each) white baking chocolate
1 jar (7 ounces) marshmallow cream
½ cup crushed peppermint candy
½ teaspoon peppermint extract
Line a 9 inch square pan with foil. If using non-stick aluminum foil you don't have to spray, but if using regular foil, spray with cooking spray or butter the foil. Set aside.
In a large heavy saucepan, combine the sugar, sour cream and butter. Cook and stir over medium heat until sugar is dissolved. Bring to a rapid boil; cook and stir until a candy thermometer reads 234° (soft ball stage), about 5 minutes.
Remove from heat; stir in white chocolate and marshmallow cream until melted. Fold in peppermint candy and extract. Pour into prepared pan and chill until firm.
Using the foil, lift the fudge out of the pan. Gently peel off foil and cut fudge into 1 squares. Store in the refrigerator. Makes 2 pounds.
