PA Dutch Chicken and Waffles
This classic PA Dutch dish has been around since the 1600's. The pulled chicken or turkey in gravy over waffles and mashed potatoes is a hearty and delicious comfort food meal and simple to make!
The Chicken Part
(Turkey can be used as well and this is a great way to use roast chicken or turkey leftovers. I roasted my bird with sage, Lil Doggy Season Salt and pepper).
1 roasted chicken or turkey, with the meat pulled apart off the bone and shredded. (roughly 2-3 cups of pulled meat)--set aside
Take broth from roasting, add roughly 5 cups of water.
Add 2 tbs of Better Than Bullion chicken.
Bring to a simmer and add 1 1/2 C of flour or cornstarch mixed in enough water to dissolve.
Slowly whisk into hot gravy, continually stirring until it thickens.
Add the meat, season to taste.
Let simmer, stirring occasionally another 5 minutes or so.
Waffles
2 eggs
2 C flour
1 3/4 C milk
1/2 C vegetable oil
2 tbs sugar
4 tsp baking powder
1/4 tsp salt
1 tsp vanilla
Mix all together and cook in a waffle iron until done.
Full Dinner ---
Waffles with mashed potatoes and gravy over both, corn, pepper cabbage or coleslaw and cinnamon applesauce on the side. The full PA Dutch dinner classic! Enjoy!

Easy Chicken Broccoli Noodle Casserole
INGREDIENTS:
1 package of pasta or noodles - undercooked by 1-2 minutes
1-2 pounds cubed chicken thighs or breasts
1 cup diced onion
1 cup sliced leeks - sometimes I use celery
1 cup diced mushrooms
1 can cream of mushroom soup
1 can cream of chicken soup
1 cup sour cream
1 1/2 cups milk
2 cups grated cheese - mozzarella and cheddar
1/2 tsp. black pepper
1 tsp. poultry seasoning
1/2 tsp. celery seed
1 tsp. thyme
3-4 cloves minced garlic
salt and pepper
1/4 cup fresh chopped parsley or 1 tbsp. dried
pinch cayenne pepper - optional
1 cup cauliflower (approx.)
1 cup broccoli (approx.)
oil
Preheat oven to 400 degrees
Cook egg noodles/pasta according to package and
undercook by 1-2 minutes.
In a pan on medium high add oil, onions, leeks and
salt and pepper. Stir and cook 1 minute.
Add mushrooms and minced garlic. Stir and cook 1 minute.
Add chicken pieces, stir and cook for 5 minutes or
until no longer pink. Turn off heat.
In a large bowl add cream of chicken, cream of mushroom,
and sour cream. Stir.
Add spices and stir.
Add chicken, veggies and juices, broccoli and noodles.
Give gentle but thorough stir.
Place in a greased baking dish and level.
Cover and bake for 25-30 minutes.
Remove from oven and top with cheese.
Bake uncovered for an additional 10-15 minutes or until
cheese is melted.
Let rest for 15 minutes before serving.
Enjoy.

BBQ Ranch Chicken Casserole
Welcome to our 2023 Marching in With Casseroles Collaboration. I'm starting off the month with my BBQ Ranch Chicken Casserole. It is so cheesy and creamy. Y'all are going to love this one. Let me know what you think about this version and y'all enjoy.

Ingredients:
12 ounce Bowtie or Rotini Pasta
3 cups cooked chicken-shredded
1/2 cup cooked, chopped bacon
2 1/2 cups shredded cheddar cheese
10 ounce can Rotel®
7 ounce can diced roasted green chiles
15 ounce can corn
1 cup ranch dressing
1/2 cup BBQ sauce
1 small onion diced.
Preheat oven to 350°F
In a large bowl combine the pasta, chicken, bacon, onion and 2/3 of the cheese. Mix well
No add the Rotel® and green chiles, but do not drain them, add juices as well.
Drain the corn and add to the mixture.
Now add the BBQ sauce and ranch dressing. Mix well to combine.
You can add more BBQ sauce and dressing if it seems to dry.
Pour mixture into a 9x13 prepared baking dish and place in preheated oven.
Bake about 12-15 minutes. Remove from oven and distribute the remaining cheese.
Put back in oven and cook and additional 5-7 minutes to cheese is brown and bubbly.
Remove from oven and let cool about 5 minutes then serve.

CHICKEN NOODLE CASSEROLE -- MAKE IT EASY MONDAY CROCK POT DINNER
Let the crock pot/slow cooker be your friend and make you the hero with this creamy yummy chicken noodle casserole! Cheap, easy, and can feed an army!
CHICKEN NOODLE CASSEROLE
2-3 lbs of chicken
4 C chicken broth/stock
4 C water
1 tbs Italian seasoning
1 C sour cream
1/2 brick of cream cheese
1 C shredded cheddar cheese
3/4 lb. spaghetti
1 C crushed potato chips
Put chicken, stock, water and Italian seasoning in crock pot.
Cook on high for 4 hrs if faster time desired, 8 on slow for longer.
Debone chicken and shred.
Add sour cream, cream cheese, and spaghetti.
Cover and cook another half hr or until noodles are done.
Add cheese and potato chips, cover and cook another 5 minutes or until cheese is melted.
Serve!
