Rainbow Penne Picnic Salad @explorecuisine
Serves 4-6
Ingredients:
250g Explore Cuisine Green Lentil Penne!
a handful of cherry tomatoes halved
a handful of sugar snap peas, sliced
¼ red onion, sliced
½ red bell pepper, sliced
handful of microgreens
¼ pomegranate, de-seeded
For the Topping:
a handful of fresh basil leaves
4 cherry tomatoes, halved
30g walnuts, roughly chopped
For the Walnut Pesto:
30g walnuts
125ml olive oil
20g fresh basil
½ clove garlic
salt & pepper to taste
Method:
Cook the pasta as per the packet instructions. Once cooked, cool down by running under cold water to prevent it from overcooking. Drain and add to a large mixing bowl.
Meanwhile, add the walnut pesto ingredients to a blender and blitz until smooth (or leave slightly chunky if you prefer). Pour onto the pasta and mix well to coat.
Now add the rest of the ingredients and gently mix until combined.
Pour into a nice salad platter or bowl and top with fresh basil leaves, cherry tomatoes, and a sprinkle of chopped walnuts.

This is a great recipe that is light, healthy, super delicious, and perfect for a summer gathering or a quick healthy dinner. All together with prep, it takes less than 20 minutes. I hope you enjoy!
Summer Pasta with Shrimp, Peas, and Tomatoes
Ingredients
• 1 box penne pasta already cooked
• ½ tsp minced garlic
• 1 cup fresh peas
• 1 cup shredded parmesan cheese
• 1 cup cherry tomatoes, halved
• 2 tsp fresh parsley
• 6 tsp olive oil
• ½ lb. uncooked shrimp
• 2 tsp butter
Directions
1. In a skillet add 3 tsp of oil, 2 tsp butter and ¼ tsp of garlic and heat on medium
2. Add shrimp and sauté for 4-5 minutes and set to the side.
3. In a Wok add 3 tsp oil and ¼ tsp garlic and heat on medium
4. Add 1 cup of fresh peas to the Wok
5. Add 1 cup cherry tomatoes, halved
6. Stir peas and tomatoes and cook for 5 minutes
7. Add the cooked shrimp, mix and cook for an additional 2-3 minutes
8. Place Pasta Mixture into a large bowl
9. Sprinkle on 1 cup shredded parmesan cheese
10. Then sprinkle on 2 tsp fresh parsley and serve

How to Make Pasta Primavera
This simple PASTA PRIMAVERA is bright, fresh, healthy, and ready on your table in 20 minutes.
???? Ingredients ????
▢ 1 pound penne pasta
▢ 1 Tablespoon olive oil
▢ 1 clove garlic, minced
▢ An assortment of your favorite fresh veggies ,chopped (i.e. snap peas, broccolini, bell peppers, mushrooms, zucchini, onion, asparagus, peas, spinach, cherry tomatoes)
For the sauce:
▢ 1 Tablespoon butter
▢ 2/3 cup low-sodium chicken broth
▢ 1/2 cup heavy whipping cream (or half and half)
▢ 1/2 cup freshly grated parmesan cheese, or more
▢ salt and freshly ground black pepper, to taste
▢ fresh basil leaves, chopped (for garnish, if desired)
???? Instructions ????
Bring a large pot of water to a boil. Cook pasta according to package instructions. Set aside.
Add olive oil to a large skillet over medium high heat. Add garlic and stir for 30 seconds.
Add veggies, season them with a little salt and pepper, and saute for about 2-4 minutes, just until slightly tender. You don't want to cook them too long. Remove to a plate.
Add butter to pan. Add chicken broth and cream and bring to a simmer.
Stir in cheese. Season with salt an pepper, to taste. If the sauce seems too thick, add more chicken broth, cream or water, to your liking.
Add cooked pasta and veggies to the pan and toss to combine. Top with fresh basil, if desired.

This Penne with Mushrooms & Peas, shows just how great the pasta works will all kinds of ingredients. The tubes help soak up the sauce and carry the flavors through in every time, and the size make penne really easy to eat.
For this recipe, I cook down a good amount of crimini mushrooms, until the flavors are nicely concentrated and the mushrooms have a great texture. To lighten it up a bit, I add a good handful of peas, which provide a great contrast in texture and flavors. To hold everything together, use a bit of chicken stock to create a sauce that coats the pasta and marry's all the flavors.
