How To make Stir Fry Beef & Snow Peas

1 lb Boneless sirloin steak 2 ts Cornstarch 1 tb Soy
sauce 1/2 c Peanut or vegetable oil 2 oz Cellophane noodles, uncooked 6 oz Frozen snow pea pods, thawed And drained 2 tb Peanut or vegetable oil 2 sl Fresh ginger (1" slices) 1 tb Peanut or vegetable oil 2 Carrots, scraped and cut in 1/8 inch slices 15 oz Baby corn, drained 15 oz Straw mushrooms,drained 1 ts Cornstarch 2 tb Soy sauce 2 tb Rice wine Partially freeze steak; slice diagonally across grain into thin strips. Combine 2 teaspoons cornstarch and 1 tablespoon soy sauce in a medium bowl, stirring until smooth; stir in steak. Cover and marinate in refrigerator 1-4 hours, stirring occasionally. Pour 1/2 cup oil around top of preheated wok or large
skillet, coating sides; heat at medium-high (375) for 2 minutes. Add noodles, a small amount at a time,
andstir-fry 2-3 seconds or until noodles expand and turn white. Remove noodles, and drain on paper towels; arrange in a ring on a serving platter. Drain excess oil from wok. Add snow peas to wok; stir-fry 2 minutes. Remove from wok, andarrange around edges of noodles. Pour 2 tablespoons oil around top of preheated wok, coating sides; heat for 2 minutes. Add steak and ginger; stir-fry 4-5 minutes or until steak is no longer pink. Remove from wok, and set aside. Pour 1 tablespoon oil around top of preheated wok, coating sides; heat for 2 minutes. Add carrot, corn, and mushrooms; stir-fry 3 minutes. Combine 1 teaspoon cornstarch, 2 tablespoons soy sauce and wine; stir until smooth Add cornstarch mixture to carrot mixture; stir fry 1 minute or until thickened. Ingredients:
Beef:
10 ounces beef, thinly sliced across the grain, see notes
1 tbsp low sodium soy sauce
1 tbsp freshly grated ginger
1 clove garlic, minced
1/2 tsp baking soda
Stir Fry:
10-12 ounces snow peas
1/4 cup water
1/3 cup beef broth, cold
2 tbsp oyster sauce
1 tsp cornstarch
3/4 tsp sugar
1/4-1/2 tsp red chili flakes
as needed canola oil
as needed scallions, thinly sliced
as needed sesame seeds
Instructions
Beef:
-Toss beef with ginger and minced garlic.
-In a small bowl stir together soy sauce and baking soda. Pour over beef and mix well to evenly coat the beef slices (I use my hands to ensure it's mixed well).
-Set in the fridge to marinate for 30-120 minutes depending on the cut used. (see notes)
-While beef is marinating whisk together beef broth and cornstarch (see notes). Stir in oyster sauce, sugar and chili flakes.
Stir Fry:
-Prep snow peas by trimming the ends and removing the side string.
-Heat a wok or large skillet over medium-high heat and add a generous splash of oil. When the oil is hot add the beef, separating the slices with your hands as you add it. Sauté for 2-3 minutes until just cooked through and starting to brown. Remove to a clean bowl and cover.
Add the 1/4 cup of water and snow peas to the wok and cook uncovered for 4-5 minutes, stirring occasionally until most of the water has cooked off and the peas are starting to soften but are still slightly crisp (they will continue to cook in the sauce).
-Add the sauce to the snow peas and cook for about a minute, stirring until the sauce fully thickens. Add the beef and stir to combine and warm.
-Serve over rice or desired noodles and garnish with scallions and sesame seeds.
Notes:
-Several cuts of beef will work. I enjoy tenderloin or strip loin, however, flank steak will work well too. Be sure to cut the beef into thin strips across the grain.
-If using tenderloin, marinating for 30-60 minutes is enough, it's already a tender cut. If using strip loin or flank 1-2 hours is best.
-Cornstarch dissolves better in cool liquids, so if your broth is hot, allow it to cool first. It will also dissolve better in the broth as opposed to the thick oyster sauce.

250 g beef steak or tenderloin thinly sliced
Marination
1/4 tsp. ground black pepper
1 tbsp. oyster sauce

1/4 cup vegetable cooking oil , with around 2 tbsp. removed
2 garlic cloves chopped
150 g fresh snow peas
pinch of salt
SAUCE
1 tsp. dark soy sauce
1 tsp. light soy sauce
1/4. tsp. sugar
1 tsp. cornstarch
1/2 tbsp. water

Retired Chinese restaurant chef, Dad Chen, teaches you how to make Stir Fry Beef With Snow Peas 雪豆(荷兰豆)炒牛肉 at home.
Ingredients:
Beef (Flank steak) : 8 oz or 230 g
Snow Peas : 7 oz or 200 g
Carrot : 30 g
Bamboo Shoots : 30 g
Baking Soda : ¼ tsp
Light Soy Sauce : 1 tsp
White Pepper : a dash
Garlic Powder : a dash
Egg White : 1
Cornstarch : ½ tbsp
Veg. Oil : 2 tsp + 1 tbsp
Minced Garlic : 1 clove
Green Onion Root : 1 sprig
Veg. Oil For Frying
Sauce:
Unsalted Chicken Stock or Water : ¼ cup
Light Soy Sauce : 2 tsp
Oyster Sauce : 2 tsp
Dark Soy Sauce : 1 tsp
Sugar : 1 tsp
White Pepper : a dash
Sesame Oil : ½ tsp
Cornstarch : ½ tbsp
