How To make Canton Chicken& Snow Peas
-Chicken - 4 Medium-size dried mushrooms
2 t Each soy sauce, cornstarch,
-dry sherry & water -dash of white pepper 1 1/2 lb Chicken breasts, skinned,
-boned, and cut in bite-siz -pieces 3 1/2 T Salad oil
1 sm Clove garlic, minced
1/2 c Sliced bamboo shoots
1/4 lb Snow peas, ends and
-strings removed -Cooking sauce - 1/2 c Water
1 T Dry sherry
2 T Oyster sauce
1/4 t Sugar
1 t Sesame oil
1 T Cornstarch
Cover mushrooms with warm water, let stand for 30 minutes, then drain. Cut off and discard stems; squeeze mushrooms dry, thinly slice and set aside. In a bowl, combine soy, cornstarch, sherry, water and pepper. Add chicken and toss to coat, then stir in 1 1/2 t of the oil and let stand for fifteen minutes to marinate. Prepare cooking sauce - mix together wateaar, sherry, oyster sauce, sugar, sesame oil and cornstarch and set aside. Place a wok or wide frying pan over high heat. When pan is hot, add 2 T of the oil. When oil begins to heat, add garlic and stir once. Add chicken and stir-fry until chicken is opaque (about 3 minutes). Remove chicken from pan. Add remaining 1 T oil to pan. When oil is hot, add mushrooms and bamboo shoots. Stir-fry for one minutes, adding a few drops water if pan appears dry. Add snow peas and stir-fry for 1 1/2 minutes, adding a few drops more water if pan appearas dry. Return chicken to pan. Stir cooking sauce, add to pan, and cook, stirrin guntil sauce bubbles and thickens. Variations: Cashew or Almond Chicken - first toast 1/2 c cashews or blanched almonds in 1 T salad oil over medium-low heat until golden; remove from pan and set aside. Stir in nuts just before serving.

MY NANAY COOKS PANCIT CANTON FOR THE GUESTS
PANCIT CANTON NI NANAY
Prep time: 30 minutes
Cooking time:
Serves 10
1 1/2 lb cut up chicken thighs and breasts, bone in and skin on
1/2 lb chicken liver
1/2 wedge large green cabbage - sliced thinly
6 tbsp cooking oil
1 lb snow peas, ends removed and cut in half
2 large carrots, peeled and shredded
1 large onion, peeled and chopped
3 stalks kinchay or celery - cut into small pieces
10 cloves garlic, minced
1 lb medium size shrimp, peeled and deveined
1/2 cup soy sauce or more depending on your taste
7 cups chicken broth
salt and pepper
2 large excellent brand canton noodles
Add chicken to a pot of water, season with salt and pepper and bring to boil.
Cook chicken until blood is no longer visible and chicken are fully cooked.
Remove chicken and cool down.
Add chicken liver to the boiling water and cook for 5 minutes or until liver is cooked.
Remove liver and set aside. Cool down as well.
Save broth.
When chicken has finally cooled down - remove bones and skin and shred into strips.
Set aside..
Cut cooked liver in half and set aside as well.
Pre wash vegetables and set aside.
Let's cook - pre heat oil in a big wok for 2 minutes.
saute onions for 2 minutes.
Add garlic and cook for 30 seconds.
Add cooked chicken and liver - combine well.
Season with 4 tbsp soy sauce and ground pepper.
Add vegetables.
Add 1 cup broth and cook for 2 minutes - stirring constantly.
Taste and adjust.
remove and transfer to another bowl if you are using the same wok like my mother.
Let's cook the noodles -
Add 6 cups of broth into the wok and bring to a boil.
Break down noodles as you add it to the wok.
Cover and allow to soften a little before combining (2 minutes)
Uncover and continue to stir.
Add 3 tbsp soy sauce for color and flavor.
Season with ground pepper and keep stirring.
Add vegetables and combine well.
OH NO! SHE FORGOT THE SHRIMP!!!!!!!
Cook medium size peeled and deveined shrimp in a pre heated cooking oil for a minute until cooked.
Add to the noodles as garnish.
Serve with lemon wedges and more soy sauce.

Vegetable Oil 2 tbsp
Garlic, minced 3 cloves
Onion, sliced 1 whole
Chinese Chorizo, sliced 1 pc
Carrot, sliced 1 whole
Snow peas ½ cup
Shitake Mushroom, sliced ½ cup
Soy Sauce 2 tbsp
Broth (Chicken or Pork) 6-7 cups
Good Life Egg Noodles 1 pack
Cabbage, sliced 2 cups
Oyster Sauce 2 tbsp
Pepper pinch
Sesame Oil 2 tbsp

Procedure
Pour oil in a deep pan or wok over high heat. Saute garlic and onion until aromatic.
Add Chinese chorizo, carrots and snow peas. Saute for a minute.
Add sliced shiitake mushroom, soy sauce and seafood mix. Cook for a minute then add the broth.
Let it boil then add the egg noodles. Slowly mix until the noodles absorb the liquid (you may add more broth).
Add the sliced cabbage and oyster sauce. Mix and cook for a minute.
Add sesame oil and mix again for another minute.
Turn off heat. Serve hot.

1-2 bulb onion, chopped
1/4 lb shrimp, whole, peeled and deveined
(shells and heads set-aside)
2 pcs chicken thighs with bone (boiled, skin and bone
removed and chopped in cubes)
4 cups or more broth (see below for recipe)
3-4 pcs chinese sausage, sliced thin
1-2 medium carrots, julienned
1/4 lb snow peas (2 cups)
1/4 lb green beans, sliced thin (2-1/2 cups)
2 celery stalks, sliced thin
1/2 small red pepper, julienned
1/8 small cabbage, chopped in small square
1 cup sliced shitake mushroom
1/2 tsp sugar
2-3 tbs oyster sauce
1 tbs soy sauce
salt and ground black pepper
16 oz (1 lb) pancit canton
8 cups broth
-Boil 8 cups of water with 1 tbs Kosher salt
-Add shrimp shells and heads and chicken thighs and simmer
for 20 mins or until the chicken is cooked.
-Remove chicken and strain the broth. Discard shrimp shells
and heads.
