How To make Stir Fry Beef and Snow Peas

1 lb Boneless sirloin steak
2 ts Cornstarch
1 tb Soy sauce
1/2 c Peanut or vegetable oil
2 oz Cellophane noodles, uncooked
6 oz Frozen snow pea pods, thawed
And drained 2 tb Peanut or vegetable oil
2 sl Fresh ginger (1" slices)
1 tb Peanut or vegetable oil
2 Carrots, scraped and cut in
1/8 inch slices
15 oz Baby corn, drained
15 oz Straw mushrooms,drained
1 ts Cornstarch
2 tb Soy sauce
2 tb Rice wine
Partially freeze steak; slice diagonally across grain into thin strips. Combine 2 teaspoons cornstarch and 1 tablespoon soy sauce in a medium bowl, stirring until smooth; stir in steak. Cover and marinate in refrigerator 1-4 hours, stirring occasionally. Pour 1/2 cup oil around top of preheated wok or large
skillet, coating sides; heat at medium-high (375) for 2 minutes. Add noodles, a small amount at a time,
andstir-fry 2-3 seconds or until noodles expand and turn white. Remove noodles, and drain on paper towels; arrange in a ring on a serving platter. Drain excess oil from wok. Add snow peas to wok; stir-fry 2 minutes. Remove from wok, andarrange around edges of noodles. Pour 2 tablespoons oil around top of preheated wok, coating sides; heat for 2 minutes. Add steak and ginger; stir-fry 4-5 minutes or until steak is no longer pink. Remove from wok, and set aside. Pour 1 tablespoon oil around top of preheated wok, coating sides; heat for 2 minutes. Add carrot, corn, and mushrooms; stir-fry 3 minutes. Combine 1 teaspoon cornstarch, 2 tablespoons soy sauce and wine; stir until smooth Add cornstarch mixture to carrot mixture; stir fry 1 minute or until thickened. Add steak mixture; stir-fry until thoroughly heated. Spoon steak mixture into center of platter.

One of my greatest pleasures in cooking is when the summer garden vegetables come into season. My wife loves gardening and she takes great pride in the delicious and nutritious vegetables that she carefully plants and nurtures in her garden. I have many friends who are also dedicated and committed gardeners. One of my friends, Brad, brought me some snow peas from his garden yesterday. They looked so delicious and enticing, and I decided to cook it in the same evening with beef for our dinner. I chose to cook them with beef, using a cut known as flank steak in part responding to a question that a person (also known as Brad) asked me during my last live streaming session. He would like to know what is the best cut of beef for stir-frying. I have great success with flank steak over the years. I prep the flank steak the same way as I prep chicken. Therefore, I was able to have the beef ready for stir-frying in less than 10 minutes. Advanced prepping in combination with stir-frying, flavor chasing, and template-based cooking of my FAST Cooking System allows me to cook almost anything that I would like to eat anytime. In addition to this beef with snow peas dish, I also cooked two additional dishes for dinner, all in less than 30 minutes. You can do the same. Seasoning Sauce
1 Tbsp sugar
1&1/2 Tbsp soya sauce
1 Tbsp Shaoxing wine
1/2 tsp corn starch
1 tsp sesame oil
2 Tbsp water
Note:
1. You can use sweet peas or garden peas too instead of sugar snap peas.
2. Sugar snap peas can be eaten raw. They are crunchy and delicious. So do not cook it too long.

Stir Fry Beef And Snow Peas in Oyster Sauce | Tenderising Beef Slices
This video shows how the Cantonese marinate and tenderize meat for stir-frying.

Ingredients:
• 300g beef
• 1/2 tsp salt,
• 1/2 tsp sugar
• 1 Tbsp veg oil
• 3 Tbsp water
• *1/2 bicarbonate of soda/baking soda
• 1 tsp corn flour
• 1 tsp Shaoxing wine
• Slurry - 1 tsp corn flour to 3 Tbsp water
*Baking soda tends to be the term used in American. While the UK and Australia use bicarbonate of soda. Baking soda breaks down the tough protein in the meat for a succulent bite

Beef with snow peas is a simple, fast, and delicious recipe. The dish is a Chinese recipe in origin, but has made it's way into cookbooks around the world. Due to the fact that the entire dish can be made up in 30 minutes, it makes a fantastic midweek meal. Believe me, the entire family will love it. Get the recipe:
There are a few tips to cooking this yummy recipes. First, although any cut of beef can be used, I use a sirloin cut sliced thinly across the grain. Remember, the better the cut of meat, the better the dish will become. You certainly don't want anything too fatty or grisly. It also should be mention that the meat should be a room temperature to ensure it cooks evenly.
You can add as many snow peas as you like. I wouldn't add too many though as you might overpower the rest of the ingredients. We usually find that a cup of peas will suffice.
You can alter the rest of the spices if you wish. For example, if you're a ginger lover, add more. The same applies to the garlic and the rest of the spices.
