Easy Pecan Sandies
Pecan Sandies are a super easy, must make for the holidays cookie, and require only a few ingredients. They are also known as Mexican wedding cookies. No matter what you call them, they are simply delicious!

✅Ingredients
• 1 cup butter
• ⅓ cup granulated sugar
• 2 teaspoons water
• 2 teaspoons vanilla extract
• 2 cups all purpose flour
• 1 cup chopped pecans
• 3 tablespoons powdered sugar, for rolling
✅Instructions
1️⃣ In a large mixing bowl, cream together butter and sugar until fluffy. Beat in water and vanilla.
2️⃣ Stir in flour and pecans until well combined. Shape dough into 1-inch balls. Place at least 2 inches apart onto two lightly greased or parchment-lined baking sheets.
3️⃣ Place shaped cookies into the fridge for 30 minutes while the oven preheats to 325 degrees Fahrenheit.
4️⃣ Bake in the preheated oven for 18 to 20 minutes until lightly golden. Remove from oven and let cool completely on the baking sheet.
5️⃣ Roll cooled cookies in powdered sugar*. Store in an airtight container.
NOTES
*One alternative is to roll your cookies in powdered sugar while still warm. The powdered sugar will melt slightly and create a different effect on the cookie. Try both and see which you like best! Either way is delicious.

Ingredients
5-6 chicken tenders
1/4 teaspoon salt and pepper, or to taste
For the coating,
1/2 cup flour
2 eggs
2 tbsp milk/cream
1/2 cup chopped pecans
1/2 cup panko bread crumbs
1/4 teaspoon salt
1/2 teaspoon pepper
1/2 tsp garlic powder
1/2 tsp dry thyme
1 teaspoon paprika
1/4 tsp cayenne pepper (optional)
oil spray
INSTRUCTIONS,
In a bowl add chicken tenders, and season with salt and pepper.
to a bowl, add flour.
In another bowl, Add and whisk the eggs and milk/cream together.
in a large bowl mix together, panko breadcrumbs, chopped pecans, salt, pepper, garlic powder, dry thyme, cayenne pepper, and paprika.
coat each chicken tender first in the flour, then in the egg mix, and then finally in the Pecan and panko breadcrumb mixture.
lightly spray oil on top.
spray or brush oil the Air fryer Basket and add coated chicken tenders in a single layer.
Air Fry at 380F for 10-12 minutes.
Halfway through the cooking time, turn the chicken tenders over and continue cooking until the chicken looks crispy and is cooked through and the internal temperature of the chicken reaches 165°F.
