How To make Lady's Fingers (Okra)
3 c Fresh whole okra
1/4 c Tomato, chopped
1/4 c Red onion, chopped
1 tb Fresh ginger root, finely
Chopped 1/4 c Vinegar
Cook okra in small amount of water until tender but not mushy (about 5 to 10 minutes).
Drain. Arrange in single layer in glass dish (do not use a metal dish or container). Pour vinegar over the okra marinate in refrigerator 3 hours, Drain; discard vinegar. Arrange okra in serving dish. Garnish with chopped tomatoes, onions, and ginger root. Serve chilled.

Note: Blanch the okra in boiling water with some salt and cooking oil. Add more okra as needed. You don't have to increase the sauce proportion.

Ingredients
1 lb Whole Okra
2 Tomatoes
2 Onions
2-3 Green chillies
1/2 tsp of salt, red chilli powder, turmeric, and coriander powder
1 tsp Cumin seeds
Recipe
1. Add oil to pan over high heat
2. Add sliced okra
3. Fry for 4-5 min, util slightly browned
4. Remove from heat
5. Add sliced vegetables to same pan (onions, tomatoes, green chillies)
6. Add spices (coriander powder, cumin seeds, turmeric, red chilli powder)
7. Add salt to taste
8. Fry for 1-2 minutes
9. Add cooked okra to the pan
10. Mix well and fry for 1 min
11. Reduce to low heat and simmer for 2-3 minutes

Ingredients
Lady's Finger - 250 gms
Besan Flour - 1/2 cup
Rice Flour - 1 tbsp
Chili Powder - 1 tsp
Turmeric Powder - 1/4 tsp
Chaat masala - 1 tsp
Cumin Seeds/Ajwain - 1/2 tsp
Salt
Oil

Method
Wash and dry the okra
Cut the crown and the tail
Cut the okra into half and slice it again in the middle, remove the seeds and keep them aside
To the cut okra, add the spice powders chili powder, turmeric powder, chaat masala, salt and mix them well
Add besan, rice flour, cumin seeds and mix them well
Let it sit for 10 mins
Heat some oil for deep frying
Add the okras into the hot oil and deep fry them
Cool it a bit and serve them
