Cheese Cake Pecan Chocolate Dipped Cookies
I found a new recipe! It was for cheese cake cookies! Yummy sounding! So I decided to give it a go, but I wanted to give it a little twirl of my own, so I did and added a pecan and dipped them in yummy chocolate! Mmmm! CHEESECAKE COOKIES
INGREDIENTS
8 ounces full fat cream cheese room temperature
1/2 cup butter room temperature
1 1/4 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup semi sweet chocolate chips
INSTRUCTIONS
Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper or silicone mats.
Beat cream cheese and butter together at high speed until fluffy and smooth; 1-2 minutes. Add sugar to the butter mixture and beat until fully incorporated and fluffy; 1-2 minutes. Beat in the eggs and vanilla; 1 minute.
In a separate, medium-sized bowl, whisk together the flour, baking powder and salt. Gradually add the dry ingredients to the butter mixture and stir just until incorporated. Do not over-mix.
Drop by rounded tablespoons onto the prepared baking sheets about 2 inches apart; batter will be sticky. *You can put the batter in the fridge for 10-20 minutes to help it firm up a bit. (This is the step that I put the pecan's on top of each cookie, making sure they were in each cookie firmly)
Bake at 350 degrees for 10-11 minutes. Cookies should be light in color, not browned, and just starting to brown on the bottom. *Length of baking time may vary from oven to oven.
Cool cookies on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
NOTES
The vanilla smooths out the flavor, but for a more tart, cheesy flavor, add a teaspoon of lemon juice or no extracts at all.
Do not overbake. This can cause the cookies to come out more dry and biscuit like.

These cookies do not need to be refrigerated. Store at room temperature in a sealed container.

For chocolate dipped cookies, melt some chocolate in the microwave (chocolate chips or wafers and dip the cooled cookies in the melted chocolate.
I got a mug and put 2/3 of a cup of semi sweet chocolate chips into it and microwaved it for 15 seconds, then stirred, then microwaved, then stirred, and kept repeating until the chips were all melted and it was smooth.
I then smoothed spoonfulls of the chocolate onto the cookies, they were much too soft for dunking, onto the cookies and put the cookies onto parchment paper to solidify.
I waited 2 hours, then partook.
They were soooooooo yummy.

Here’s the recipe for the chocolate pecan pie cookies! The base cookie is an Oreo cookie dupe and the center is chocolate pecan pie filling!
Chocolate Cookie
1 1/2 cups unsalted butter
1 1/2 cups light brown sugar, packed
2 large eggs
3 tsps vanilla
3 cups ap flour
1 cup black cocoa powder
2 1/2 cups oreo crumbs (20 cookies)
1 1/2 tsp baking soda
1 tsp baking powder
1 tsp salt
Chocolate pecan Pie Filling
2 cups pecans
3 large eggs
3/4 cup dark brown sugar
2/3 cup light corn syrup
1 tsp vanilla
2 tbsps unsalted butter, melted
1/2 tsp salt
3/4 cup semi sweet or bittersweet chocolate chips
Bake 350F for 20-25 minutes
