How To make Pear Breakfast Cake
1 lg Ripe but firm pear, about 9
-ounces Freshly ground black pepper -(optional) 2 lg Eggs
3/4 c Sugar
1/2 ts Vanilla
2/3 c Brown rice flour
1/3 c Cornstarch
1/2 ts Baking powder
1 tb Vegetable oil
Powdered sugar Preheat oven to 350F. Grease a 10 x 8 x 2-inch ceramic baking dish with butter. Peel, core and dice the pear. Spread in baking dish and top with a light grinding of black pepper, if desired. Beat eggs and sugar until pale in color and very thick. Add vanilla. Combine rice flour, cornstarch and baking powder. Sift over egg mixture and fold in. Drizzle oil around edge of bowl and fold in. Spread batter over diced pear. Bake for 35 minutes. A pale gold, crackly "sugar bloom" like a very thin layer of pastry will form on top of the cake. Dust with powdered sugar before serving from the dish, warm or cold. Serves 8. PER SERVING: 790 calories, 3 g protein, 39 g carbohydrate, 3 g fat (1 g saturated), 53 mg cholesterol, 38 mg sodium, 1 g fiber. - Baking powder - 6g (1 ½ tsp.)
- Pears - 2-3 pcs.
- Eggs - 3 pcs.
- A pinch of salt
- Brown sugar - 140g (⅔ cup)
- Plain yogurt - 100g (½ cup)
- Vegetable oil - 100g (¼ cup)
- Some jam for final brushing

BETH’S PEAR SPICE CAKE
Makes a 9x5 loaf
PRINT RECIPE HERE:
INGREDIENTS:
3/4 cup (180ml) of melted butter
1/3 cup (80ml) vegetable oil
¾ cup (135g) brown sugar
3 eggs
1/3 cup (80ml) of water
1 ½ (7.5ml) tsp vanilla extract
1 ¾ (210g) cup flour
1 tsp (5ml) baking soda
¾ tsp (3.75ml) salt
1 tsp (5ml) cinnamon
¼ tsp (1.25ml) ground ginger
¼ tsp (1.25ml) nutmeg
1/8 tsp (large pinch) ground cloves
2 ripe pears, any variety
1 tbsp (5g) old fashioned oats
dust with powdered sugar
METHOD:
Preheat oven to 350F (175C) and spray a 9x5 (23cm x 13cm) loaf pan with baking spray. Set aside.
In a large mixing bowl combine the butter, oil, brown sugar, eggs, water and vanilla. Whisk until smooth.
In a medium sized mixing bowl combine the flour, baking soda, salt, and spices. Whisk until combined.
Add the dry ingredients to the wet ingredients, whisking in thirds until combined.
Transfer batter to the loaf pan. Top with the sliced pears standing upright in alternating pattern. Sprinkle with oats.
Bake for 40-45 minutes until golden brown and risen and a toothpick comes out clean.
Allow to cool and remove cake from the tin and slice!

Walnut Pear Coffee Cake
THEE most delicious coffee cake you will ever have! The pears shine and make this a wonderful breakfast cake, or dessert. It will disappear in moments.
1 C chopped walnuts
1/3 C brown sugar
1/4 C cold butter
1 tsp Cinnamon
FILLING:
2 ripe pears, peeled and sliced (about 2 cups)
2 tsp lemon juice
1/2 C butter, softened
1 C sugar
2 eggs
1 tsp vanilla
1 3/4 C all-purpose flour
3/4 tsp baking powder
1/2 tsp soda
1/4 tsp salt
1 C sour cream
In bowl, combine walnuts, brown sugar and cinnamon: set aside. Place flour in a small bowl and cut in butter until it resembles coarse crumbs. Stir in 3/4 cup of the nut mixture; set aside for the topping. The rest will go in the filling. Toss pears in lemon juice and set aside.
In a mixing bowl cream butter and sugar, add eggs and vanilla. Add flour, baking powder, soda, and salt then add sour cream. Mix well. Spread 2/3 of the batter into a greased 9 springform pan. top with reserve nut mixture, pears and remaining batter. Sprinkle with walnuts and reserve topping mixture. Bake at 350° for 50-55 minutes. cool on wire rack for 10 minutes - remove sides of pan. Cool for another hour before removing the bottom pan from the cake.
