I think it’s safe to say that we know it’s been hotter than hell in Cali lately. I’m dying a slow death & melting away BUT! Not without my latest agua fresca in hand ???? check it out y’all! ???? Agua Fresca de Tuna Roja Ingredients •10 red prickly pears •water •3 limes, slice one & halve the other two •1 c sugar (more or less, depending on your sweet tooth) Instructions 1. If you’re scared of the needles you might get stuck on your hands from peeling your prickly pears, wear gloves! Let’s start by lopping the ends off of the prickly pears, making a slit down the middle, then peeling the skin back to release a very pretty & delicious prickly pear/tuna roja. 2. Using a spoon, scrape off some of the prickly pear flesh from the peels and save for garnish later. Throw the pears into a blender with about 2 c or so of water. Blend until smooth. Pour this mixture through a mesh strainer into your pitcher. Add more water until your pitcher is almost full. Now squeeze in the juice of 2 limes & stir in the sugar. I used about 3/4 of a cup, but however much sugar you decide to use is up to you & your tastebuds! Garnish with prickly pear flesh & some lime slices.
