St Vincent/Caribbean Ground Nut Sugar Cake- Peanut Logah/ Peanut Brittle Or Nut Cake
RECIPE
1 cup of water
2 1/2 cups of roasted peanuts
2 1/2 cups of granulated sugar
3 tablespoons grated/minced ginger(add more or less if desired)
2 Cinnamon stick or 1/2 teaspoon of cinnamon powder
1 Teaspoon vanilla extract/ vanilla essence
*GREASE WAX PAPER BEFORE PLACING GROUND NUT SUGAR CAKE TO PREVENT STICKING.

Ingredients:
-Mong phalli (Peanuts) roasted 2 & ½ Cups
-Sugar 1 & ½ Cup or to taste
-Water 1 Cup
-Doodh (Milk) ½ Cup
-Ghee (Clarified butter) 2 tbs
-Elaichi powder (Cardamom powder) ½ tsp
-Mong phalli (Peanuts) roasted & roughly chopped
Directions:
-In a frying pan,add peanuts & dry roast on medium flame for 2-3 minutes,takeout in a strainer & let it cool at room temperature.
-Remove peanuts peels.
-In a grinder,add roasted peanuts & grind to make powder,take out in a bowl & set aside.
-In a wok,add sugar & caramelize sugar on very low flame until it turns brown.
-Turn off the flame,add water,turn on the flame,mix well & cook on low flame for 8-10 minutes (one sting consistency).
-Now add ground peanuts,mix well & cook on low flame until it leaves the sides of the pot (6-8 minutes).
-Add milk,clarified butter,mix well & cook on low flame until ghee separates (5-6 minutes).
-Add cardamom powder & mix well.
-On a greased mold,add peanuts,prepared barfi & spread evenly.
-Let it cool completely at room temperature.
-Cut into desired shape & serve!

-Frying pan mein mong phalli dal dein aur darmiyani ancch per 2-3 minutes kliya dry roast ker lein phir strainer mein nikal ker room temperature per thanda ker lein.
-Mong phalli ka chilka remove ker lein.
-Grinder mein roasted mong phalli dal dein aur grind ker ka powder tayyar ker lein,bowl mein nikal lein & side per rakh dein.
-Karahi mein cheeni dal dein aur bohat halki ancch per cheeni caramelize aur brown ho janay tak paka lein.
-Chulha bund ker dein,pani dal dein,chulha on ker lein aur ache tarhan mix ker ka halki ancch per 8-10 minutes kliya paka lein (one sting consistency).
-Ab ground mong phalli dal ker ache tarhan mix karein aur halki ancch per pot ki sides chornay tak paka lein (6-8 minutes).
-Doodh aur ghee dal ker ache tarhan mix karein aur halki ancch per ghee alag ho tak paka lein (5-6 minutes).
-Elaichi powder dal ker ache tarhan mix ker lein.
-Greased mold mein mong phalli aur tayyar barfi dal dein aur evenly pheela lein.
-Room temperature per thanda ker lein.
-Desired shape mein cut ker ka serve karein!

Here is what you'll need!
NO-BAKE CRISPY CHOCOLATE PEANUT BUTTER BALLS
Servings: 40-50
INGREDIENTS
½ cup salted butter, softened
2 cups creamy peanut butter
3 cups powdered sugar
3 cups crispy rice cereal
2 cups chocolate chunks (preferably dark), for coating
PREPARATION
In a large microwave-safe bowl, add the butter and peanut butter. Microwave for 1 minute.
Using a fork, stir together the melted butter and peanut butter until smooth. Microwave additional 20 seconds, as needed.
Add the powdered sugar and rice cereal to the bowl. Gently mix together until fully incorporated.
Using your hands, roll the mixture into approximately 40 1-inch balls. Place them on a wax paper-lined baking sheet and freeze for 15 minutes.
In a small microwave-safe bowl, add the chocolate chunks. Microwave for 60-75 seconds, stopping to check and stir every 30 seconds.
Drop the frozen balls in the melted chocolate one at a time, use a fork to roll around to ensure an even coating. Place back on a wax paper-lined baking sheet.
Garnish with additional rice cereal while the chocolate is still warm. Chill until the chocolate has set.
