How To make Pasta with Cherry Tomato Sauce
16 oz Vegetable spiral pasta
Water for boiling 2 ts Balsamic vinegar
1 1/4 c Thinly sliced onions
1 tb Garlic, minced
2 tb Tomato paste
1 1/2 c Halved cherry tomatoes
2 tb Cornstarch
2 tb Miso
3 tb Balsamic vinegar
1/2 c Chopped fresh parsley
Cook pasta in a large pot of boiling water for 8 to 10 minutes. Drain & rinse with cold water. Set aside. While pasta is cooking, heat 2 ts balsamic vinegar & 2 ts water in a large skillet & saute onions & garlic over medium heat. Stir frequently. Add tomato paste, dissolved in 1 cup water. Stir gently & add tomatoes. Cook, stirring occasionally till vegetable are very soft. Dissolve cornstarch in 2 tb cold water & pour into blender. Add miso & cooked vegetables. Puree till smooth. Return puree to skillet. Add 3 tb balsamic vinegar & parsley & heat through. Toss pasta with sauce & serve hot.

Ingredients
2 Tbsp butter
3 cloves garlic
1/2 onion
3 Tbsp tomato paste
1 cup heavy cream
1/2 cup Parmesan cheese
Salt & pepper
12 oz pasta (I used rigatoni)
1/3 cup pasta water
Basil & parm for garnish
Cook your pasta in salt in water to package directions (save some pasta water). In a pan over medium heat, add butter, onion and garlic. Cook until softened around 2 minutes. Add tomato paste and cook until lightly caramelized. Add your cream, then season with salt and pepper. Add Parmesan cheese, pasta water and your cooked pasta. Mix well. Serve with basil or fresh Parm.

If you're looking for the perfect summer pasta recipe, this is the one for you. It's light yet incredibly satisfying. So go ahead and make my easy cherry tomato pasta recipe for a quick and delicious meal!

CHERRY TOMATO PASTA
INGREDIENTS (2 servings)
120g/4 oz pasta
200g (0.5 lb) cherry tomatoes
1 tbsp olive oil
1/2 tsp salt
1 tbsp dried oregano
1 tsp minced garlic
1-2 tbsp butter
1/2 tsp sugar (if needed)
Water+salt (to cook pasta)
DIRECTIONS
1. To a deep pot/stockpot add the cherry tomatoes, olive oil and salt. Cover and cook it on medium/medium low flame for 10 minutes
2. In 10 mins the cherry tomatoes would have released a lot of juice. Now add oregano and minced garlic. Cover and simmer for 8-10 mins
3. While the sauce is cooking, boil a pot of water with 1 tsp salt. Once the water starts boiling, add pasta and cook as per package instructions
4. While the pasta is cooking, taste the sauce and adjust as needed. If it seems too sour, add 1/2 tsp sugar. If you like some spice, add some red chilli flakes
5. Once the pasta is cooked, use a strainer or slotted spoon and add it directly into the sauce. Mix until the pasta is coated in sauce. Add some pasta water if the sauce is too dry
6. Finally add 1-2 tbsp butter and mix well. Adding butter at the end makes the sauce creamy and velvety
7. Garnish it with thinly sliced basil leaves and enjoy!

SUBSTITUTES:
• No cherry tomatoes?
fresh ripe tomatoes or canned tomatoes also work
• No oregano?
Mixed italian herbs works
• No olive oil?
Cook the sauce in butter/oil

TIPS:
• Always have the sauce ready before the pasta is cooked. In the video I timed it so they’re both done at almost the same time but you can cook the sauce first and then the pasta
• The sauce can be refrigerated upto 5 days in an airtight container
• Don’t drain for add oil to pasta water. It’s unnecessary and is not how pasta must be cooked
• Always add salt to pasta water
