How To make Pancakes with Orange Sauce
3/4 c Whole Wheat Flour
1 1/2 ts Baking Powder
1 tb Honey
2 x Stiffly beaten Egg Whites
1/2 c All-purpose Flour
3/4 c Skim Milk
1 ts Cooking oil
PANCAKES Combine flours, baking powder, and 1/8 teaspoon salt. Combine milk, honey and oil; add to dry ingredients. Stir just till moistened. Fold in egg whites. Spray a cold griddle with Pam. For each pancake, pour about 1/4 cup batter onto hot griddle. Cook till brown, turning when pancakes have bubbly surfaces. Serve with Orange Sauce. ORANGE SAUCE Combine 2 T sugar and 1 T cornstarch. Stir in 3/4 c water and 2 T frozen orange juice concentrate. Cook and stir till thickened and
bubbly. Cook and stir 2 minutes more. Stir in one 11-oz can mandarin orange sections, drained, and 1 T finely chopped walnuts. Both children and adults love the taste of these spicy pumpkin pancakes - it's kind of like a pumpkin pie for breakfast! They are delicious on a fall morning, topped with creamy orange sauce.
INGREDIENTS
Pumpkin Pancakes:
1 cup (250 ml) pumpkin purée (you can use canned or cooked fresh pumpkin)
2 ½ (480 ml) cups 2% milk
1 egg
1 teaspoon baking soda slaked vinegar (the chemical reaction of baking soda and vinegar makes this pancake batter particularly fluffy)
2 teaspoons ground cinnamon
1 teaspoon baking powder
5 tablespoons white sugar
2 tablespoons sunflower oil
1 ½ cup all-purpose flour
Orange Sauce:
3 oranges
5 tablespoons white sugar
1/8 cup (30g) unsalted butter
2/3 cup (150ml) heavy cream
PREPARATION
1. In a large bowl, whisk together egg, sugar, milk, pumpkin purée, cinnamon, baking powder, baking soda slaked vinegar and all-purpose flour. Add sunflower oil and stir to combine.
2. Heat a griddle over medium heat. For each pancake, pour 1/4 cup (60 mL) batter onto griddle and cook for about 1-2 minutes or until bubbly around the edges. Flip and cook for 30-40 seconds or until golden brown. Transfer to a plate and repeat with the remaining batter.
3. Serve with Orange Sauce and enjoy!

▶Ingredients:
DRY
1.5 cup unbleached flour
1 tbsp baking powder
¼ tsp pink salt
3 tbsp raw sugar
WET
1 cup freshly squeezed orange juice
orange zest
¾ cup almond milk
1 egg
¼ cup melted margarine
½ tsp vanilla extract
▶How to Make
1. Make orange zest by grating the orange peel. Set aside.
2. Cut the 2 oranges in half and squeeze out the juice.
3. In a large bowl, crack the egg, then add all the wet ingredients, mix well. Then add the flour and the rest of the dry ingredients. Mix until smooth.
4. Over low heat..Pour ¼ cup of batter onto lightly grease the fry pan, cook for about 1 minute each side.
5. Serve hot! Top with butter or margarine, syrup and fresh fruits of your choice. Enjoy!
