How To make Orange Flavored Pancakes with Applesauce
1 c Self-rising pancake mix
-regular or whole-wheat 1/2 ts Baking soda
1 Egg or eqivalent substitute
3/4 c Orange juice; unsweetened
1/2 c Water (approximately)
1 ts Vanilla extract
2 c Applesauce; chunky, unsweete
-canned or homemade -recipe follows 1 tb Orange liqueur or 2 tsp
-orange juice (optional) Cinnamon or apple-pie spice Stir pancake mix and baking soda together. Make a well in the center and add egg, 3/4 cup juice, 1/4 cup water, and vanilla. Stir until well blended. Add more water as needed. Spray a nonstick griddle until slick with cooking spray. Heat over moderate flame. When hot, use a measuring cup to drop batter on skillet by scant 1/4 cupfuls. Cook undisturbed until tops of pancakes are bubbled and nearly dry. Use a spatula to turn; briefly brown the other side. Keep warm. Meanwhile, stir applesauce and orange liqueur or juice, if desired, together in a small saucepan over low heat until bubbling. To serve, divide pancakes among 4 plates and spoon on hot applesauce. Sprinkle with spice. FOUR brUNCH SERVINGS: {215 calories each} EIGHT DESSERT SERVINGS: {110 calories each} {liqueur adds 10 calories per brunch serving; under 5 per dessert serving} (Extra pancakes can be stored in the freezer; allow to cool on wax paper; then wrap individually and freeze. Reheat in toaster, toaster-oven, oven, or microwave oven.) FAST APPLESAUCE: Peel, core, and thinly slice 3 or 4 large McIntosh apples into a heavy saucepan. Add 1/2 cup water (or juice: unsweetened apple, white grape, or orange). Cover tightly and simmer 4 to 5 minutes. Fork-stir until chunky or whip smooth. Sweeten to taste, if desired, with granulated sugar substitute. FOUR SERVINGS {about 100 calories each} SOME VARIATIONS ~~~~~~~~~~~~~~~ PINEAPPLE PANCAKES: Substitute unsweetened pineapple juice for the orange juice. (Or use apple juice or any other unsweetened fruit juice.) {220 calories per brunch serving; 110 calories per dessert serving} PINEAPPLE TOPPING: Stir 1/2 teaspoon cornstarch and 3 or 4 tablespoons water into 1 cup undrained unsweetened juice-packed crushed pineaple. Cook and stir in a small saucepan until bubbling. Add a pinch of pumpkin-pie spice, if desired. {5 calories per tablespoon} -----

Upside-Down Dulce De Leche Apple Cake
Serves 5-6
INGREDIENTS
1 ½ cups all-purpose flour
⅓ cup sugar
1 teaspoon baking powder
2 eggs
⅓ cup oil
⅓ cup milk
1 teaspoon vanilla extract
2 tablespoons butter
1 cup dulce de leche
3 granny smith apples, peeled and thinly sliced
Vanilla ice cream
PREPARATION
Preheat oven to 350°F/180°C.
In a large bowl, mix together the flour, sugar, baking powder, eggs, oil, milk, and vanilla until smooth. Set aside.
In a small pot over medium heat, melt the butter. Add the dulce de leche and stir until mixture comes to a boil.
Immediately pour the dulce de leche mixture into a round baking pan.
Layer the apples in a circular pattern with each one overlapping the other. Repeat until the entire bottom of the pan is covered.
Pour the cake batter on top of the apples and spread the batter evenly on top.
Bake for 25 minutes, then cool until bottom is slightly warm.
Place a large round plate on top of the cake pan, then flip quickly. Give the cake pan a few pats to make sure the cake is released, then lift off the pan.
Slice, serve with ice cream!

INGREDIENTES
1 ½ tazas de harina

PREPARACION
Precalentar el horno a 350°F / 180°C.
En un tazón grande mezclar la harina, azúcar, polvo para hornear, huevos, aceite, leche y vainilla hasta que sea una mezcla homogénea, reserve a un lado.
En una olla pequeña, derretir la mantequilla a fuego medio. Agregar el dulce de leche y mover hasta que la mezcla suelte un hervor.
Inmediatamente verter la mezcla de dulce de leche en un molde redondo para hornear.
Acomodar las rebanadas de manzanas en capas y en un patrón circular posicionando una un poco encima de la otra. Repita hasta que el fondo del molde esté completamente cubierto.
Vertir la mezcla de pastel encima de las manzanas y distribuir uniformemente.
Hornear por 25 minutos, luego dejar enfriar hasta que el fondo del molde esté tibio.
Colocar un plato amplio encima del molde e invertir rápidamente. Dar unas palmaditas al molde para que el pastel se desprenda facilmente. Remover el molde.
Rebanar, y servir con helado de vainilla!

This apple crisp has browned butter in the crisp topping, giving it a beautiful nutty aroma that complements the apples perfectly.

Ingredients
6 cups (900 g) apples (such as Gala, MacIntosh or other sweet, eating apple), peeled and sliced
¼ cup (60 mL) maple syrup
1 tsp (5 mL) vanilla extract
½ cup (115 g) unsalted butter
1 ¼ cups (115 g) regular rolled oats
1/3 cup (50 g) whole wheat flour
½ cup (100 g) packed light brown sugar
1 tsp (5 mL) ground cinnamon
pinch salt
Directions
1. Preheat the oven to 350 F (180 C).
2. Place the sliced apples in a 6-cup (1.5L) by volume baking dish (any shape). Stir in the maple syrup and vanilla to coat the apples.
3. Melt the butter in a small saucepot over medium high heat until it browns and takes on a nutty aroma (once the foam subsides, it should be done). Set aside.
4. Stir the oats, flour, brown sugar, cinnamon and salt in a mixing bowl. Add the browned butter and stir until blended. Spread this evenly over the apples and bake for about 45 minutes, until the apples yield easily when a paring knife is inserted in the centre of the crisp (the crisp should be bubbling at the edges.) Allow the crisp to cool for 15 minutes before serving.

Healthy Banana Pancakes that are only a few ingredients, dairy-free and gluten-free too. They are so easy to make and absolutely delicious. I am sure you have been seeing me enjoy them on my stories so I wanted to make a recipe video for you all. I nailed this version out of the few I tried and personally liked it the most. This recipe makes 7 mini pancakes or one portion so feel free to double or triple it. You will need:

1 ripe banana
1 large egg
pinch of salt
dash of pure vanilla bean paste or vanilla extract
1/3 cup oat flour — see notes below
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Please note: If you don’t have oat flour you can simply add some rolled oats to a blender and blend until you get a flower like consistency. I did use rolled oats the other day and I personally like this texture way more as it’s definitely more fluffy and less mushy.

In a bowl mix the first four ingredients and make sure your banana is nice and mashed. Add the oat flour and incorporate until you have a thick batter. In a pan on medium heat add some cooking spray and let it heat up a bit. I made mini pancakes because the smaller they are the better they will cook. Cook them on each side for 2-3 minutes or until golden. Enjoy with any toppings you love and follow for more.

2 tablespoons Oil or melted butter
3 tablespoons Milk of your choice
1 teaspoon stevia or other sweetener
1 teaspoon Vanilla extract
1 cup (95g) Ground almonds/almond flour
1/4 teaspoon Salt
1 teaspoon Baking powder
Butter/oil of choice for frying
Sugar free maple syrup
Directions:
1. In a large bowl, beat eggs, oil, milk and vanilla extract.
2. Add ground almond flour, baking powder and salt. Stir until combined.
3. Heat a skillet over medium-low heat, melt one tablespoon butter or oil.
4. Scoop about 1/4 cup of the batter, cook for 1-2 minutes, until golden brown at the bottom and bobbles appears on top, flip and cook for about 1-2 minutes more.
5. Serve!
