Ingredients:
Prepare Homemade Pancake Mix:
-Sugar ½ Cup
-Maida (All-purpose flour) 5 Cups
-Milk powder 1 & ¼ Cup
-Cornflour ½ Cup
-Baking powder 2 tbs
-Himalayan pink salt 1 tsp or to taste
-Baking soda 1 tbs
-Vanilla powder 1 tsp
How to Prepare Pancakes from Homemade Pancake Mix:
-Homemade Pancake mix 1 Cup
-Anda (Egg) 1
-Cooking oil 1 tbs
-Water 5 tbs
-Pancake syrup
Directions:
Prepare Homemade Pancake Mix:
-In a grinder,add sugar,grind to make powder & set aside.
-On a large bowl,place sifter,add all-purpose flour,powdered sugar,milk powder,cornflour,baking powder,pink salt,baking soda,vanilla powder,sift well & mix well.Pancake mix is ready!
-Can be stored in an airtight jar or zip lock bag for up to 3 months (shelf life) (yield: 1 kg) makes 50+ pancakes.
How to Prepare Pancakes from Homemade Pancake Mix:
-In a jug,add 1 cup of pancake mix,egg,cooking oil & whisk well.
-Gradually add water & whisk until well combined.
-Heat non-stick frying pan & grease with cooking oil.
-Pour ¼ cup of prepared batter & cook on low flame until bubbles appear on top (1-2 minutes) (1 cup makes 6-7 pancakes depending on size).
-Drizzle pancake syrup & serve!
-1 Cup of pancake mix makes 6-7 pancakes.

Cheese potato pancakes!
This is a really easy recipe using ingredients you likely have at home already! The mozzarella can be easily substituted for your favorite cheese - cheddar is a great option.

1 russet potato (400g)
1 tbsp sugar (9g)
1/4 cup cornstarch (34g)
Mozzarella cheese (10g each)
Salt for boiling water

Healthy Banana Pancakes that are only a few ingredients, dairy-free and gluten-free too. They are so easy to make and absolutely delicious. I am sure you have been seeing me enjoy them on my stories so I wanted to make a recipe video for you all. I nailed this version out of the few I tried and personally liked it the most. This recipe makes 7 mini pancakes or one portion so feel free to double or triple it. You will need:
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 ripe banana
1 large egg
pinch of salt
dash of pure vanilla bean paste or vanilla extract
1/3 cup oat flour — see notes below
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Please note: If you don’t have oat flour you can simply add some rolled oats to a blender and blend until you get a flower like consistency. I did use rolled oats the other day and I personally like this texture way more as it’s definitely more fluffy and less mushy.

In a bowl mix the first four ingredients and make sure your banana is nice and mashed. Add the oat flour and incorporate until you have a thick batter. In a pan on medium heat add some cooking spray and let it heat up a bit. I made mini pancakes because the smaller they are the better they will cook. Cook them on each side for 2-3 minutes or until golden. Enjoy with any toppings you love and follow for more.
