Gajar - 1
Aloo - 2 medium ( 1 grate, 1 chop)
Baingan - 1 medium
Cauliflower - 2 florets
Palak - 5-6 patte
Pyaaz - 1 large
Hari Mirch - 3
Ginger Garlic Paste - 1 tsp
Hara Dhania - 2 tbsp
Besan - 250g / 2 pack cup
Namak - taste hisab se
Lal Mirch Powder - 1/2 tsp
Dhania Powder - 1/2 tsp
Chat Masala - 1 tsp
Ajwain - 1/4 tsp
Soda - 1/4 tsp
Oil - 2 tbsp + frying ke lie
Chat Masala - sprinkle karne ke lie

Crispy Pakora Recipe | Potato, Onion and Spinach Bhaji | Authentic Punjabi Style
In this video I show you how to make the perfect Pakora. There is no need for baking powder, or baking soda as you will find in many recipes these days. The recipe is very versatile and can be adapted to suit any vegetable or even chicken and meat. Keep it plain with just onions to make onion bhajis, or make it the traditional Punjabi way with potatoes and spinach. Either way still tastes delicious!
Ingredients: Makes approx. 25-30 Pakoras depending on size
4 Medium Potatoes – finely diced
4 Large Onions – Finely sliced
1 Bowl of Fresh Spinach – finely chopped
¼ Tsp Carom Seeds
Salt to Taste (Recipe used 1 Tbsp)
2 Tbsp Basaar Mix
1 Tsp Chilli Flakes
1 Tsp Tandoori Masala
1 Tsp Garam Masala
1 Tsp Chaat Masala
1 Tsp Coriander Powder
2 Green Chillies
2 Tbsp Full Fat Yogurt
160g Gram Flour
1 Tbsp Water
Oil For Frying
Method:
1. In a bowl add the potatoes, onions and spinach. Mix until they are all combined.
2. Add in the carom seeds, salt, basaar mix, chilli flakes, tandoori masala, garam masala, chaat masala, coriander powder, green chillies and yogurt. Mix well until all the spices are evenly coated on the vegetables.
3. Add in the gram flour, and mix until you have a dry thick batter. At this point add in the water and leave to rest for 10 mins. (See tips section for more information)
4. Heat oil on a medium flame, before adding in the Pakoras turn the heat down to its lowest.
5. Using a tablespoon carefully spoon in each Pakora making sure that they are around the same size.
6. Fry on a low heat for approximately 10 -15 mins, making sure you turn occasionally to evenly brown the Pakoras.

Tip: It’s important to have a thick batter if you feel your batter is too wet, you can add more gram flour in. On the other hand if your batter is not coming together easily and is very dry, you can add 1 more tsp of water.
It’s important to let the batter to rest as this will naturally allow the batter to come together.

MIXED VEG PAKORA
Preparation time 10-15 minutes
Cooking time 20-25 minutes
Serve 2-4
Ingredients
For Batter
1 ¼ cup Gram flour, बेसन
Salt to taste, नमक स्वादअनुसार
¼ tsp Carom seeds, अजवाइन
1 tsp Baking soda, बेकिंग सोडा
½ cup Water, पानी
1 tbsp Curd, beaten, दही
Water, पानी
1 tbsp Rice flour, चावल का आटा
1 ½ tsp Oil, तेल
For Stuffing Bhavnagri Chili
100 gms Paneer, grated, पनीर
1 tbsp Coriander leaves, finely chopped, धनिया पत्ता
Salt to taste, नमक स्वादअनुसार
2 tsp Green chutney, हरी चटनी
2 tbsp Nylon sev, सेव
½ tsp roasted Coriander seeds, crushed, धनिया के बीज
6-7 Bhavnagri chillies, भावनगरी मिर्च
For Pakora
2 medium size Onion, rings, प्याज
100 gms Paneer, cut into medium size cube, पनीर
1 large Potato, medium slice, आलू
1 Tomato, slice, टमाटर
For Bhajiya
1 medium size Onion, slice, प्याज
1 medium size Potato, thinly julienned, आलू
¼ cup Spinach, shredded, पालक
½ tsp roasted Coriander seeds, crushed, धनिया के बीज
¼ tsp Fennel seeds, सौंफ़
¼ tsp Cumin seeds, जीरा
¼ tsp Carom seeds, अजवाइन
Salt to taste, नमक स्वादअनुसार
2 Green chillies (chopped & less spicy) हरी मिर्च
¼ tsp Turmeric powder, हल्दी पाउडर
1 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
⅓ cup Gram flour, बेसन
Other Ingredients
Oil for frying, तेल तलने के लिए
Nylon sev (for coating) सेव
2-3 Green chillies (slit & less spicy) हरी मिर्च
Process
For Batter
In a bowl, add gram flour, salt to taste, carom seeds, baking soda, water as required and mix it well.
Now, add beaten curd and mix it, add water as required and make smooth batter.
Add rice flour, oil and mix everything well and keep it aside for 9-10 minutes.
For Stuffing Bhavnagri Chili
Slit the chillies and keep it aside for further use.
In a bowl, add paneer, coriander leaves, salt to taste, green chutney, nylon sev and mix it well.
Now, add roasted coriander seeds and give it a good mix.
Stuff the prepared mixture in the bhavnagri chillies.
Keep it aside for further use.
For Pakora
Cut the onions, potatoes and tomatoes into medium size slices.
Now, cut the paneer into medium size cubes.
Slit the bhavnagri green chillies into the middle and keep it aside for further use.
For Bhajiya
In a bowl, add all cut vegetables, roasted coriander seeds, fennel seeds, cumin seeds, carom seeds, salt to taste, green chili and mix it well. Squeeze the vegetables properly and remove the excess water.
Now, add turmeric powder, ginger garlic paste and mix, then add gram flour and mix everything properly.
Keep it aside for further use.
For Frying
Dip the potatoes, onion, paneer, and tomato slice into the batter and fry on moderate heat
Once the vegetables are half done, remove and keep it aside.
Now, dip the stuffed bhavnagri green chillies into the batter and coat with a nylon sev and place into hot oil, once green chillies are cooked well, remove it on a absorbent paper and keep aside for further use.
Now, add bhajiya mixture in small parts and deep fry until it’s crisp from all the sides
Remove and keep it aside for further use.
Add green chili into batter and place into hot oil and fry until nice crispy texture on it.
Now, deep fry the half done pakoras on moderate heat until crispy.
Transfer it on a platter and serve hot with green chutney or tomato ketchup.

Prepare Kadhi:
-Baisan (Gram flour) 1 Cup
-Dahi (Yogurt) sour ½ kg

-Zeera (Cumin seeds) ½ tsp
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Haldee powder (Turmeric powder) 2 tsp
-Lal mirch powder (Red chili powder) 1 tbs
-Namak (Salt) ½ tbs or to taste
-Pani (Water) ¼ Cup
-Pani (Water) 3 Cups
Prepare Pakoray:
-Baisan (Gram flour) 2 Cups
-Namak (Salt) 1 tsp or to taste
-Baking soda ¼ tsp
-Pani (Water) 1 Cup or as required
-Dhania (Coriander seeds) crushed 1 tbs
-Lal mirch powder (Red chili powder) 1 tsp
-Hari mirch (Green chilies) chopped 2
-Pyaz (Onion) sliced 1 medium
-Hara dhania (Fresh coriander) chopped ¼ Cup
Tadka:
-Oil ¼ Cup
-Pyaz (Onion) sliced 1 small
-Lehsan (Garlic) 3 cloves
-Sabut lal mirch (Whole red chilies) 4-5
-Zeera (Cumin seeds) 1 tsp
-Curry pata (Curry leaves) 8-10
Directions:
Prepare Kadhi:
-In frying pan,add gram flour and roast until fragrant & let it cool.
-In bowl,add roasted gram flour,yogurt and mix well.
-Gradually add water and mix well until smooth and set aside.
-In pot,add oil,curry leaves,cumin seeds,ginger garlic paste and mix well.
-Add turmeric powder,red chili powder,salt and mix well.
-Add water and mix well for 2 minutes.
-Add gram flour yogurt mixture and mix well.
-Add water,mix well and bring it to boil,cover and cook on low flame (approx. 2 & ½ hours) and keep stirring in between.
Prepare Pakoray:
-In pot,add gram flour,salt,baking soda and mix well.
-Gradually add water and mix well to form a smooth batter.
-Add coriander seeds,red chili powder,green chilies,onion,fresh coriander and mix well.
-In wok,heat oil and fry pakoray until crispy and golden.
-Now add fried pakoray in kadhi,stir gently and cook for 1-2 minutes.
For Tadka:
-In frying pan,add oil,onion and fry until translucent.
-Add garlic and fry.
-Add whole red chilies and mix,add cumin seeds,curry leaves and mix well.
-Now add tadka on kadhi and serve with rice.

-Frying pan mein baisan dal ker khusbu anay tak roast ker lein aur thanda ker lein.
-Bowl mein roasted baisan aur dahi dal ker ache tarhan mix ker lein.
-Thora thora ker ka pani shamil karein aur smooth hunay tak ache tarhan mix ker lein aur side per rakh dein.
-Pot mein oil,curry pata,zeera aur adrak lehsan paste dal ker ache tarhan mix ker lein.
-Haldee powder,lal mirch powder aur namak dal ker ache tarhan mix karein.
-Pani dal ker 2 minutes kliya ache tarhan mix ker lein.
-Baisan dahi ka mixture dal ker mix ker lein.
-Pani dal ker ache tarhan mix karein,ubal anay ka bad dhak dein aur halki ancch per paka lein (approx. 2 & ½ hours) and beech mein chamcha chalatey rahein.
Prepare Pakoray:
-Pot mein baisan,namak aur baking soda dal ker ache tarhan mix ker lein.
-Thora thora ker ka pani shamil karein aur ache tarhan mix ker ka smooth batter tayyar ker lein.
-Dhania,lal mirch powder,hari mirchein,pyaz aur hara dhania dal ker ache tarhan mix ker lein.
-Karhai mein oil garam karein,crispy aur golden hunay tak pakoray fry ker lein.
-Add fried pakoray ko kadhi mein dal dein,mix karein aur 1-2 minutes kliya paka lein.
For Tadka:
-Frying pan mein oil aur pyaz dal ker translucent hunay tak fry ker lein.
-Lehsan dal ker fry karein.
-Sabut lal mirch dal ker mix karein,zeera aur curry pata dal ker ache tarhan mix ker lein.
-Ab tadka ko kadhi ka upper dal dein aur chawal ka saath serve karein.

-Lauki (Bottle gourd) thin slices 2 Cups

Chatpatta Magic Masala:
-Zeera (Cumin seeds) 2 tbs
-Ajwain (Carom seeds) ½ tbs
-Sabut dhania (Coriander seeds) 3 tbs
-Kala zeera (Caraway seeds) 1 tsp
-Tatri (Citric acid) ½ tbs
-Namak (Salt) 2 tsp or to taste
-Kala namak (Black salt) 1 tbs
-Lal mirch powder (Red chilli powder) 2 & ½ tbs or to taste
-Lehsan powder (Garlic powder) 1 & ½ tbs
-Chicken powder 4 tbs
-Pyaz (Onion) fried ¼ Cup
Directions:
Prepare Pakora Batter:
-In a bowl,add gram flour,red chilli powder,cumin seeds,salt,orange food color,baking powder & mix well.
-Gradually add water,green chilli paste & whisk well until smooth batter is formed.
-Add cooking oil & whisk well.
-Add fresh coriander & mix well.
Aloo ke Pakoray:
-In a bowl,add potatoes,prepared pakora batter & mix well.
-In a wok,heat cooking oil & deep fry on medium flame until golden brown & crispy.
Phool gobhi Pakoray:
-In a bowl,add cauliflower florets,prepared pakora better & mix well.
-In a wok,heat cooking oil & deep fry on medium flame until golden brown & crispy.
Palak Pakoray:
-In a bowl,add spinach,prepared pakora batter & mix well.
-In a wok,heat cooking oil & deep fry on medium flame until golden brown & crispy.
Lauki ke Pakoray:
-In a bowl,add bottle gourd,prepared pakora batter & mix well.
-In a wok,heat cooking oil & deep fry on medium flame until golden brown & crispy.
Prepare Chatpatta Magic Masala:
-In a spice mill,add cumin seeds,carom seeds,coriander seeds,caraway seeds,citric acid,salt,black salt,red chilli powder,garlic powder,chicken powder,fried onion & grind to make powder.Chatpatta magic masala is ready!
-Can be stored in an airtight jar up to 1 month (cool & dry place).
-Sprinkle chatpatta magic masala on pakora platter & serve with chutney or tomato ketchup!
