My mom loves this recipe and asks me to make it for her 7 times a week.
OK that is all a lie but she does love this recipe and I love making it for her.
It takes less than 20 minutes and the textures and flavours are insane.
I am a sucker for a fresh oyster but this creole baked oyster and crab gratin dish is also great with canned oysters. However you can find the mighty oyster

Ingredients
To make the stock
1 whole chicken
or 1 pack bone in chicken breast
3 tbs chicken bouillon
2 tbs each garlic, onion powder, paprika
1 tbs black pepper
1/2 bell pepper chopped
4 chunks celery
1/2 onion cut into pieces
please adjust to preferred taste
to make the dressing:
Preheat oven to 375
2 pack cornbread packs
water ( for cornbread)
1 package stovetop stuffing mix ( I use the savory herbs flavor or chicken flavor ) the box usually comes with two.. I only used one
2 cans cream of chicken
2 cans cream celery
2 tbs poultry seasoning or to taste
3 tbs soften butter
4- 5 cups homemade stock (adjust as necessary )
2 cups shredded chicken ( or desired amount)
*Tips*
Remember the dressing will slightly stiffen once removed from oven and it sits a while so be sure to not overcook it ! *

Recipes vary widely, with the exception of a few common components: oysters, a rich and creamy sauce, and a crispy topping, often Ritz Crackers, saltines, or breadcrumbs. Our Test Kitchen looked back at all of our recipes, and, after some tinkering, came up with what we think is the best version ever: plump oysters baked in a rich Parmesan cream sauce and topped with buttery breadcrumbs. Crumbled crackers often top this casserole, but we prefer homemade breadcrumbs because they soak up more butter.
Whatever name you give it, or however you serve it, it will remain a favorite decadent Christmas tradition.

5 tablespoons salted butter, divided ;1/4 cup chopped yellow onion; 1/4 cup chopped green bell pepper; 1/4 cup chopped celery; 2 scallions, thinly sliced; 1 teaspoon minced garlic ;2 (16-oz.) containers fresh oysters, drained well; 4 ounces fresh mushrooms, sliced (about 1 1/2 cups); 2 tablespoons all-purpose flour; 1/2 cup heavy cream; 1 ounce Parmesan cheese, grated (about 1/4 cup); 3/4 teaspoon kosher salt; 1/4 teaspoon black pepper; 1/4 teaspoon ground nutmeg; 1 cup coarse fresh breadcrumbs (from 1/4 baguette)
