How To make Oyster Fritters Cajun Style
48 ea Shucked oysters w/liquid
6 ea Eggs, beaten
4 T Baking powder
1/4 ts Oregano flakes
1 ts Black pepper
1/2 ts White pepper
1 1/2 ts Tabasco sauce
2 c Flour, all-purpose is best
1 c Milk or Half & Half
1 ts Salt
1/4 lb Butter
1/2 c Peanut or corn oil
Melt the butter in pan at approx. 300 degrees F. Saute the oysters in the melted butter for 2-3 minutes. Remove from the pan & quarter. Mix all other ingredients in bowl, including the oyster liquid. Control the thickness of the fritter batter by the amount of oyster liquid that you add. Mix in the oysters. Drop a tablespoon full of the batter into the pre-heated oil and fry until golden brown. Crispy Fried Oysters w/ Homemade Spicy Cajun Mayo
What’s up, y’all! This video is really special to me because I just love fried oysters so much! I love the crispiness, the brininess, and even the texture of fried oysters whenever I make them. I also made an amped up, loaded spicy cajun mayo for the perfect dipping accompaniment to the fried oysters. This mayo has fresh minced garlic, spices, Old Bay hot sauce, store bought smothered cajun sauce, a little fresh parsley, and a squeeze of fresh lemon to brighten it up! As far as the fried oyster breading, I kept it simple with just a single egg and some store bought Louisiana Fish Fry, which is my favorite seafood breading as y’all know by now! I added a little Old Bay hot saucer to the eggs for some heat and tanginess, but aside from that, I kept the flavors simple so the natural flavor from the oysters shine through. I’ll even show you how to clean the oysters and what to look for when trying to remove the membrane that many folks forget to remove! I definitely hope you enjoy this recipe and video! INGREDIENTS
- raw oysters
- fish fry of your choice (about 1 ½ cup for every 20 or so oysters)
- canola oil
- 1 egg
- dash of Old Bay hot sauce
Cajun Mayo
- 2-3 heaping TB mayo
- 1 TB smothered cajun sauce
- couple dashes Old Bay hot sauce
- 2-3 cloves minced garlic
- 1 tsp sugar
- crushed red pepper flakes (optional)
- parsley
- juice from ½ lemon
- pepper
All given measurements are an approximation and meant to be tailored to suit your individual preferences and dietary needs!

RECIPE:
Start with a 16 oz tub of oysters, drain and rinse well.
Cover with half and half or butter milk, add at least 1 tbsp.
hot sauce. Refrigerate over night or at least 8 hours.
The next day drain off excess milk but do not rinse with water.
Dredge in a mixture of:
2 cups all purpose flour
1/2 cup corn starch
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. Cajun seasoning
Deep fry in 350 degree oil for 2 minutes or until golden brown.
Drain on paper towel for 3 to 5 minutes before serving.
Make a dipping sauce with 1/2 cup ranch dressing and
1 tsp. sriracha sauce. Mix with your finger! Lol

A recipe my late dad taught me. Did some adjustments here and there. It's simple and easy please try it!
Baby oysters - 2 cups
Eggs - 2 medium sized
Flour - 1 cup
Cornstarch - 2 teaspoons
Carrots - 3 tablespoons, grated
Green Onion - 3 tablespoons, chopped
Old Bay - 1 teaspoon
Salt - 1 teaspoon
Cold Water - 1 cup
Oyster Sauce - 1 tablespoon
Optional:
Ginger and Garlic paste - 2 teaspoons
