How To make Oyster Fritters Cajun Style
48 ea Shucked oysters w/liquid
6 ea Eggs, beaten
4 T Baking powder
1/4 ts Oregano flakes
1 ts Black pepper
1/2 ts White pepper
1 1/2 ts Tabasco sauce
2 c Flour, all-purpose is best
1 c Milk or Half & Half
1 ts Salt
1/4 lb Butter
1/2 c Peanut or corn oil
Melt the butter in pan at approx. 300 degrees F. Saute the oysters in the melted butter for 2-3 minutes. Remove from the pan & quarter. Mix all other ingredients in bowl, including the oyster liquid. Control the thickness of the fritter batter by the amount of oyster liquid that you add. Mix in the oysters. Drop a tablespoon full of the batter into the pre-heated oil and fry until golden brown. Baby oysters - 2 cups
Eggs - 2 medium sized
Flour - 1 cup
Cornstarch - 2 teaspoons
Carrots - 3 tablespoons, grated
Green Onion - 3 tablespoons, chopped
Old Bay - 1 teaspoon
Salt - 1 teaspoon
Cold Water - 1 cup
Oyster Sauce - 1 tablespoon
Optional:
Ginger and Garlic paste - 2 teaspoons
Crispy Fried Oysters w/ Homemade Spicy Cajun Mayo
What’s up, y’all! This video is really special to me because I just love fried oysters so much! I love the crispiness, the brininess, and even the texture of fried oysters whenever I make them. I also made an amped up, loaded spicy cajun mayo for the perfect dipping accompaniment to the fried oysters. This mayo has fresh minced garlic, spices, Old Bay hot sauce, store bought smothered cajun sauce, a little fresh parsley, and a squeeze of fresh lemon to brighten it up! As far as the fried oyster breading, I kept it simple with just a single egg and some store bought Louisiana Fish Fry, which is my favorite seafood breading as y’all know by now! I added a little Old Bay hot saucer to the eggs for some heat and tanginess, but aside from that, I kept the flavors simple so the natural flavor from the oysters shine through. I’ll even show you how to clean the oysters and what to look for when trying to remove the membrane that many folks forget to remove! I definitely hope you enjoy this recipe and video! INGREDIENTS
- raw oysters
- fish fry of your choice (about 1 ½ cup for every 20 or so oysters)
- canola oil
- 1 egg
- dash of Old Bay hot sauce
Cajun Mayo
- 2-3 heaping TB mayo
- 1 TB smothered cajun sauce
- couple dashes Old Bay hot sauce
- 2-3 cloves minced garlic
- 1 tsp sugar
- crushed red pepper flakes (optional)
- parsley
- juice from ½ lemon
- pepper
All given measurements are an approximation and meant to be tailored to suit your individual preferences and dietary needs!

Oysters Piccata
An Easy Pan Fried Oyster Recipe
We started with 18 medium Pacific Northwest Oysters.
Dredged in seasoned flour and dipped in egg and back into our flour.
Our seasoned flour ingredients-
3 cups- all purpose flour
1 tsp- garlic powder
1 tsp- onion powder
1 tsp- kosher salt
1 tsp- smoked paprika
1 tsp- dried thyme
1 tsp- creole seasoning or blackened spice seasoning
cracked pepper as needed
After we double dredged our oyster, we placed in 3/4 cup olive oil and 1/2 stick of butter over medium heat.
Sauce until nicely browned on both side and remove and set aside.
Slice one lemon and place in the hot oil to caramelize, remove and set aside.
Heat 1/2 stick of butter in a small sauce pan over medium heat.
Allow the butter to begin to brown and place the lemon pieces in the butter. Add 2 oz of capers and cook until heated throughout.
Spoon the caper butter over the oysters.

ASIAN SESAME FRIED OYSTERS
INGREDIENTS
2 cups flour
2 teaspoon kosher salt
1 cup yellow corn meal
1 cup self rising white corn meal
raw oysters
peanut oil, you can use other oil if you have it
shredded cabbage, I like Napa
Zea Thai Rib Sauce (Available at Rouses, if you have one. If not, any Asian sauce of your liking will do.)
1 teaspoon sesame seeds
1 teaspoon chopped green onions
1 teaspoon chopped cilantro
1 teaspoon basil ribbons
DIRECTIONS
Get your oil to 350°. Shred the cabbage and chop the herbs.
Add the first four ingredients to a large bowl. Bread the oysters in the mixture. When the oil is at 350°, CAREFULLY drop the oysters in the oil. Fry for 1.5 to 3 minutes, depending on the size of your oysters and how you like them. I pull them at the 1.5 to 2-minute mark. They’re golden and not too hard on the inside. It’s up to you on how you like them. But don’t go over 3 minutes. The texture gets funny.
When done, remove to a plate lined with paper towels. Grab another place/dish and spread some shredded cabbage on the bottom. Top with some oysters. Drizzle sauce over the top of the oysters and sprinkle with sesame seeds and fresh herbs. Boom! Done!
**Note: You really want to have the cabbage and herbs taken care of before you begin to fry the oysters. The oyster frying part goes FAST and you don’t want to have them sitting there getting cold while you shred cabbage and herbs.
