Resep Spaghetti Oriental (untuk 2-3 porsi)
Bahan marinasi ayam:
350 gr paha ayam filet
3-4 sdm campuran saus
1/8 sdt merica
Bahan campuran saus:
3 sdm saus tomat
1 sdm kecap manis
2 sdm saus tiram
3 siung bawang putih
2 cm jahe
½ sdm kecap inggris
1 sdt minyak wijen
½ sdt bubuk ngohiong
2 sdt kaldu ayam bubuk
1 sdm gula pasir
Bahan lainnya:
6 siung bawang putih
5 buah cabai merah keriting
3 buah cabai rawit merah
8 siung bawang merah
1 batang daun bawang
160 gr spaghetti, rebus 6 menit
4-5 sdm air
Langkah:
1. Di dalam mangkuk, campurkan saus tiram, saus tomat, kecap manis, kecap inggris, minyak wijen, bubuk ngohiong, bawang putih parut, jahe parut kaldu ayam bubuk dan gula pasir, aduk rata
2. Marinasi ayam dengan campuran saus dan merica, aduk rata. Diamkan selama 30 menit di suhu ruang
3. Cincang bawang putih, potong besar bawang merah, iris cabai merah keriting, cabai rawit merah dan daun bawang
4. Panaskan sedikit minyak, tumis ayam hingga kecokelatan di semua sisi kemudian masukkan sedikit air, masak hingga air menyusut, sisihkan
5. Panaskan kembali sedikit minyak, tumis bawang putih dan bawang merah hingga wangi lalu masukkan cabai merah keriting, cabai rawit, daun bawang, sisa saus, pasta dan air, masak hingga menyusut
6. Spaghetti Oriental siap disajikan

Oriental Spaghetti Recipe (yield 2-3 servings)
Chicken Marinade ingredients:
350 g chicken thigh fillet
3-4 tbsp sauce mix
1/8 tsp pepper
Sauce Mix ingredients:
3 tbsp ketchup
1 tbsp sweet soy sauce
2 tbsp oyster sauce
3 clove garlic
2 cm ginger
½ tbsp Worcestershire sauce
1 tsp sesame oil
½ tsp five-spice powder
2 tsp chicken powder
1 tbsp sugar
Others:
6 clove garlic
5 pc curly red chili
3 pc red Thai chili
8 pc shallot
1 pc green onion
160 g spaghetti, boiled for 6 minutes
4-5 tbsp water
Steps:
1. In a bowl, combine oyster sauce, ketchup, sweet soy sauce, Worcestershire sauce, sesame oil, five-spice powder, grated garlic, grated ginger, chicken powder, and sugar. Mix well.
2. Combine the chicken with the sauce mix and pepper. Mix well. Marinate for 30 minutes at room temperature.
3. Mince the garlic. Slice the shallots into large pieces. Slice the curly red chili, red Thai chili, and green onions.
4. Heat some oil. Pan-sear the chicken until browned on both sides. Then, add a bit of water and cook until it’s reduced. Set aside.
5. Heat a little bit of oil. Sauté the garlic and shallots until fragrant, then add curly red chili, Thai chili, and green onions. Add the rest of the sauce, the pasta, and water. Cook until reduced.
6. Oriental Spaghetti is ready to serve.

Made a spaghetti meal with leftover ingredients which included lots of veggies. You can add any meat of choice, I didn't have any on hand.

This is a perfect recipe for when you come home from work and you got hungry kids to feed. Everything can be ready within 20 minutes. Better and faster than take out. You can also take it to work as lunch because it reheats in the microwave really well. The flavor if impeccable, it is nutty, savory. The chicken is tender and soft. The noodles are very filling but well balanced with the veggies.
INGREDIENTS
1 lb of fresh egg noodles
12.3 oz (350 grams) of chicken breast
1/3 tsp of salt
1/3 tsp of baking soda
1/2 tbsp of Chinese cooking wine (Amazon Link -
Black pepper to taste
3 cloves of garlic, sliced thinly
1/2 inch of ginger, julienne
4 oz of carrot, julienne
1/2 of a red bell pepper, julienne
5 mushroom, sliced thinly
4 oz of snap peas
5 scallions
To Make The Sauce
1.5 tbsp of Soy sauce (Amazon Link -
1 tbsp of dark soy sauce (Amazon Link -
1 tbsp of oyster sauce (Amazon Link -
1 tbsp Hoisin sauce (Amazon Link -
1 tbsp of Chinese cooking wine (Amazon Link -
1/2 tbsp of pure Peanut butter (Amazon Link -
1/2 cup of water
INSTRUCTIONS
Slice the chicken breast thinly. Marinade with garlic, ginger, salt, Chinese cooking wine, black pepper, and baking soda. Baking soda will break down the meat fibers and tenderize the chicken. It will give you that melt in your mouth texture.
Julienne the carrot, bell pepper. Slice the mushroom. Cut the scallions. To save time, you can buy a bag of pre-cut, mixed vegetables from the supermarket.
In a sauce bowl, combine all the sauce ingredients thoroughly. The peanut butter makes the sauce creamier and thicker, helps the flavor to wrap around the ingredients. You have to break up the peanut butter a little bit first so it doesn't clump up.
Bring a pot of water to a boil and cook the noodles until 80% done. Drain completely. Do not over cooked the noodles otherwise they will turn soggy when you finish them in the wok with that lomein sauce.
Meanwhile, turn the heat to high and heat your wok until smoking hot. Toss in the marinade chicken and stir for 2 minutes or until it just changes color. Add all the vegetables except for the scallions. continue to stir for 1 minute. Add the well-drained noodles along with the lomein sauce. Keep stirring over medium heat until all the sauce is absorbed. As soon as the sauce is gone, you have to turn off the heat. Otherwise the noodles will start sticking to the wok.
Add the scallions and serve.
