How To make Orange Rosemary Syrup
Ingredients

cup
water
1/4
cup
rosemary, fresh, chopped

oranges, juice of
5
cup
sugar
Directions:
In a non-aluminium saucepan, bring the water to a boil. Pour over the rosemary and let steep for 1 hour. Strain.
Remove the zest from 5 of the oranges and set aside, then squeeze the juice into a large bowl. Set a rack over the bowl and arrange the zests on the rack. Combine the rosemary infusion and the sugar mixture in a saucepan and bring to a boil over high heat, boiling until you have a heavy syrup about 20 minutes. Pour the boiling syrup over the zests and let it drain into the juice. Return the juice mixture to the saucepan. Bring quickly to a boil, remove from the heat, and return to the bowl to cool. Skim, then bottle and store in the refrigerator.
Use this syrup with fruits, in a marinade for chicken or pork, or as the basis of a cooling drink. Just add water or sparkling water to dilute.
MAKES: 9 CUPS

Rosemary Cinnamon Simple Syrup
6 sprigs of fresh rosemary
1 cinnamon stick
½ cup sugar
½ cup water
Blood Orange & Rosemary Margarita
2 ounces fresh blood orange juice
1 ounce Rosemary Cinnamon Simple Syrup
½ fresh lime, juiced
2 ounces Añejo tequila
1 blood orange slice
1 small sprig of rosemary
????INSTRUCTIONS????
Rosemary Cinnamon Simple Syrup: Add fresh rosemary, a cinnamon stick, sugar, and water to a small pot over a medium heat. Stir occasionally until the sugar has completely dissolved. When the liquid comes to a low simmer, cover the pot, and remove the pan from the heat. Let steep for about 3 minutes, longer if you want a more intense flavor, up to 10 minutes. Strain out the rosemary and cinnamon, reserving the liquid. It should make ¾ cup of syrup. Transfer it to an airtight container. The syrup keeps in the fridge for about 2 weeks. This syrup is great for teas, homemade sodas, and cocktails.
Fill the mixing glass of a Boston shaker ⅓ full with crushed ice.
Add the blood orange juice, the rosemary cinnamon simple syrup[link], the fresh lime juice, and the tequila. Cover and shake for about 10 seconds.
Strain into a glass filled with ice.
Garnish with fresh rosemary and a slice of blood orange.
