1 pound Cake flour 1 pound All-purpose flour 2 ounce Baking powder 4 ounce Sugar Salt 12 ounce Butter 2 cup Dates -- cut-up 4 Oranges -- grated peel 2 cup Sour cream 2 cup Milk METHOD: In a food processor mix flours, b. powder, sugar and salt. Add dates and orange peel. Add butter and pulse til mealy. Dump all into a bowl and add sour cream and milk that has been mixed together. Mix gently but quickly until batter is moistened. Dump onto a floured board and knead about 20 times until mixture is smooth and cohesive. Roll out to about 3/4" thick and cut into 2" squares. Brush tops with milk or egg wash and bake at 400~ for about 15 mins.

These scones are delicious and fluffy on their own, or great paired with tea and jam. If you don’t like cardamom you can skip or sub for cinnamon (though cardamom and dates are a happy pair!). If your dates are not soft, make sure to soak them in hot water for 10 minutes. Enjoy!
Ingredients: 3 cups (390g) all purpose flour 6 tsp baking powder ¾ cup (170g) cold unsalted butter, cut into small cubes 1 tsp pure vanilla extract 1 tsp ground cardamom 1 tsp kosher salt Zest and juice of 1 orange 1 cup (250ml) whole milk 1 cup (175g) chopped medjool dates (about 8-10 large) 1 tsp salt ½ cup (100g) brown sugar 1 egg and extra sugar (for topping)
1. Mix together the flour, baking powder, cardamom, and salt (use a bowl larger than mine :)). 2. Rub butter cubes into flour mixture with finger tips, until you form a damp rubble. 3. Mix in date pieces with your hands (make sure the pieces don’t clump). 4. Mix in sugar, orange zest, milk, and orange juice. Once a shaggy dough forms, turn out onto your surface. 5. Knead until combined and form a thick dough (about 2 inches / 5cm) 6. Cut out rounds with a cookie cutter (whatever shape you have works) 7. Place onto a lined baking sheet. Brush with egg wash and sprinkle with sugar. 6. Bake at 375F / 190C for 25 minutes, or until golden brown. 7. Serve alone or with labneh / clotted cream and jam. Enjoy!
