Sometimes there aren't the words to encapsulate what you want to describe, and this is one of those times. I think on this occasion the proof of the pudding simply needs to be in the easting. You won't like me after you've tasted these, you'll LOVE me .. a LOT! Although these make 10-12 balls, if there are a dew of you in the household, particularly little ones, you're going to need to double or triple up on the ingredients.
INGREDIENTS
2 Tbsp Cacoa (cocoa) powder
2 Handfuls Cashew Nuts
1 Small Orange (The zest)
2 Handfuls Raisins
1 Tbsp Coconut Oil
HOW TO MAKE
Prepare: Spread 1 tablespoon of cacao/cocoa onto a chopping board. Grate the orange zest and squeeze the juice into a small container.
Blitz Place the nuts into the container of a hand blender and whizz for 10 seconds. Add all the other ingredients and blend for 20 - 30 seconds.
Shape Take a heaped teaspoon of mixture then, using your (clean!) hands, shape into a ball and roll over the cacao covered chopping board so it gets nicely coated. Repeat until you have used up all of the mixture.
Rest Place the finished balls onto a plate and pop in the fridge for at least 20 minutes before you devour!
