How To make Date Orange Loaf
1 Orange rind, grated
1 Juice of orange
1 Egg
1/2 c Chopped nuts
1 c Cut-up dates, soaked in
-boiling water and drained 2 T Butter
1 c Sugar
2 c Flour
1 t Baking powder
1/4 t Salt
1 t Baking soda
Add boiling water to orange juice to equal 1 cup. Sift together flour, baking powder, salt and baking soda. In mixing bowl, cream butter and sugar, then add egg. Add juice and dry ingredients alternately. Add dates and nuts. Bake in loaf pan, well greased, for 50-60 minutes in a 350'F. preheated oven.

Here is the recipe for healthy and delicious Dates and Walnut Cake, a traditional cake recipe. It is specially made during the Christmas celebrations and generally made with mild sweetness and hence can be consumed as an evening snack with a cup of tea or perhaps even for morning breakfast.
This cake is so soft, moist and easy to make. A perfect teatime cake!

Ingredients (8 inch cake mold):
1 cup dates (220g , chopped)
1 cup hot milk (250ml)
3 eggs (room temperature)
1/2 cup fine granulated sugar (100g)
1 tsp vanilla essence
2/3 cup melted unsalted butter (150g)
1 and 1/2 cup all purpose flour (200g)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon powder
1/4 tsp nutmeg powder
1/4 tsp salt
3/4 cup chopped and roasted walnuts (100g)
To roast walnuts:
Add the raw chopped walnuts onto a pan, turn the flame on medium and toss it for 2 mins. It will turn from golden colour to slightly brown. Toasted walnuts are ready!
Tips and Notes:
1. 170 C, 60 to 70 minutes is the baking time. Baking time may vary in different oven (10 mins more or less if needed, use a toothpick test after 60 mins to check if the cake is baked perfectly or not)
2. You can add had vanilla or orange juice for flavouring. Both are good options.
3. Sweetness of this cake is from dates and sugar. Hence add only the quantity of dates mentioned. 220 g of dates should be around 10 to 12 dates. Adding more dates will make the cake more sweeter, alter texture of the cake and vary baking time.
4. Roasting walnuts will remove the raw taste of walnuts and make it more crunchy and crispy.
5. Consume the cake within 3 to 5 days as it is perishable at room temperature. If refrigerated, use within 9 days.

120 g sugar
1 tsp baking powder
1/2 tsp baking soda
240 ml orange juice
50 ml vegetable oil
1 tsp vanilla essence
1 tbsp orange zest
1 tbsp almond flakes
Directions:
1. Mix all the dry ingredients. Add the juice, oil, vanilla, orange zest, and mix just to combine.
2. Pour the batter into a mold and sprinkle some almond flakes.
3. Bake at 180C for about 40 minutes or until golden brown.

With Ramadaan approaching ...this is a sure favourite at the boeka table and can be made ahead of time and cling wrapped .... It also freezes well.
Delicious Date Loaf
Ingredients
1 cup of dates chopped into chunks
1 cup of hot water
1 teaspoon of bicarbonate of soda
200 grams of soft butter
1 cup of brown sugar
1/2 a cup of golden syrup
1 tablespoon of vanilla essence
2 large eggs
2&1/2 cups of cake flour
2 teaspoons baking powder
1 teaspoon of fine cinnamon
1 teaspoon of mixed spice
A pinch of salt
Chopped walnuts ( optional )
Method
First step - Preheat your oven at 170° C. Second step - soak your dates with the cup of hot water in a bowl and add the bicarbonate of soda, give it a quick stir and set aside.
Next - Cream your butter for a minute with a mixer or a hand whisk. Add your sugar and beat for a few minutes, next add your vanilla essence and golden syrup and mix for a minute, next add your eggs one at a time and mix till well combined . Now add all your dry ingredients and beat for about a minute . Lastly add your dates with the water that it has been soaked in and stir with a hand whisk or spoon till well combined . Spoon into a greased loaf pan and bake for 1 hour and 20 minutes, check with a skewer , if it comes out dry and clean after inserting into cake , your cake is done . Remove from oven and allow to cool a bit . Take the cake out from the loaf pan and cool completely . Serve with a little cream or some butter and cheese .
You can also used a greased 20 cm Bundt cake pan to bake it in. Check for doneness by the 1 hour mark by inserting a knife or skewer, if it comes out clean its done if not bake for a additional 10 to 15 minutes. Delicious.
