How To make Sesame Orange Scones
1/2 c Sesame seeds
3 tb Grated orange rind
3 c Unsifted all-purpose flour
3 tb Light-brown sugar
1 tb Baking powder
3/4 ts Salt
3/4 c Vegetable shortening
1 c Orange juice
3 tb Granulated sugar
1. Heat oven to 425'F. Grease baking sheet. Set aside
1 T sesame seeds and 1 T orange rind. In large bowl,
combine flour, remaining sesame seeds and orange rind, the brown sugar, baking powder, and salt. With pastry blender or 2 knives, cut in shortening until mixture resembles coarse crumbs. 2. Reserve 1 T orange juice. Add remaining orange
juice to dry ingredients and mix lightly with fork until mixture clings together and fon-ns a soft dough. 3. Turn dough out onto lightly floured surface and
knead gently 5 or 6 times. Divide dough in half, With lightly floured rolling pin, roll one half of dough into a 7-inch round. Cut into 4 wedges. Repeat with remaining half of dough. 4. Place scones, 1 inch apart, on greased baking
sheet. Pierce tops with tines of fork. In small saucepan, heat reserved orange juice and the granulated sugar to boiling; stir in reserved orange rind and brush over tops of scones. Sprinkle with reserved sesame seeds. 5. Bake scones 15 to 18 minutes or until golden brown.

Blueberry Scones easy recipe
250g all-purpose flour
2 tsp baking powder
¼ tsp baking soda
1/4 cup sugar or 1/2 cup if you like sweet
1/2 cup cold butter, cubed.
180ml cup cold buttermilk (I use buttermilk drink).
1 cup blueberries + 1 tbsp flour.
Also possible to use other fruits.
Egg to apply before baking + sugar to sprinkle.
If buttermilk is not available please use milk.
Homemade buttermilk for this recipe:
3/4 cup of milk+1 tbsp white vinegar or fresh lemon juice,
mix and let a few minutes until curdled.

1/4 cangkir gula atau 1/2 cangkir jika Anda suka manis
1/2 cangkir mentega dingin, potong dadu.
180ml buttermilk dingin (saya menggunakan minuman buttermilk).
1 cangkir blueberry + 1 sdm tepung.
Bisa juga menggunakan buah lain.
Telur untuk dioleskan sebelum dipanggang + gula untuk taburan.
Jika buttermilk tidak tersedia, gunakan susu.
Buttermilk buatan sendiri untuk resep ini:
3/4 cangkir susu+1 sdm cuka putih atau jus lemon segar,
campur dan biarkan beberapa menit sampai mengental.

Cranberry Orange Cream Scones
These incredibly easy cranberry orange cream scones stir together in minutes and make the most delicious little companion for your morning coffee. FULL RECIPE BELOW

INGREDIENTS
1 small orange
1.25 cups all-purpose flour (plus some for dusting)
3/4 cup powdered sugar, divided
2 tsp baking powder
1/2 tsp salt
1/3 cup dried cranberries
1 cup heavy whipping cream
1/2 tsp vanilla extract
INSTRUCTIONS
1. Preheat the oven to 400ºF. Use a zester or small-holed cheese grater to zest the orange, then squeeze the juice into a small bowl. Set the zest and juice aside.
2. In a large bowl, stir together the flour, 1/4 cup of the powdered sugar, baking powder, salt, and dried cranberries.
3. Stir 1/2 tsp of the orange zest and the vanilla extract into the heavy whipping cream. Pour the cream mixture into the bowl of dry ingredients and stir them together until a sticky ball of dough forms.
4. Generously dust a clean work surface with flour, then scrape the dough out of the bowl onto the work surface. Divide the dough into three pieces and shape each piece into a disc, about 3-inches in diameter and about 1/2-inch thick. Cut each disc into six wedges.
5. Place the cut scones onto a baking sheet lined with parchment paper. Bake the scones for 15 minutes, or just until they begin to turn slightly golden brown on the edges. Allow the scones to cool completely after baking.
6. While the scones are baking or cooling, stir together the remaining 1/2 cup powdered sugar with 1 Tbsp of the orange juice (or just enough to make a thick glaze) and another pinch of orange zest.
7. When the scones are completely cool, drizzle the orange glaze over top and serve.

A British Classic, these baked goodies are brought together when served alongside cream cheese and jam
SCONES
Ingredients
2 cups refined flour (maida)
¾ cup butter, cut into cubes
A pinch of salt
1½ tsps baking powder
2 tbsps castor sugar + for sprinkling
¼ cup milk
Egg wash as required
Cream cheese to serve
Jam to serve
Method
1. Sieve flour in a shallow bowl, add butter, salt, baking powder and sugar. Mix using the tip of your hands till the mixture is well combined and resembles breadcrumbs.
2. Add milk and gently knead till a dough is formed. Cling wrap the dough and refrigerate for 15-20 minutes.
3. Preheat the oven at 180˚C.
4. Place the prepared dough on a parchment sheet and place another parchment sheet on top. Roll into a thick disc.
5. Cut out small discs using a cookie cutter and place them on a baking tray. Apply egg wash on top of each scone and sprinkle castor sugar.
6. Place the baking tray in the oven and bake for 20-25 minutes. Take the tray out of the oven.
7. Transfer the prepared scones on a serving plate and to serve, slice them in half apply cream cheese on one side and apply jam on top. Cover with the remaining slice and serve.

Don't make this ONE STUPID MISTAKE when Baking Bread
I feel really stupid now - this one unobvious and stupid mistake could likely make You miss on massive oven spring when baking bread.
Recipe for the dough:
- 350g bread flour (14% protein)
- 50g whole wheat flour (14% protein)
- 320g water = 80% baker's math
- 80g sourdough starter = 20% baker's math
- 8g salt = 2% baker's math
Instructions for the overnight sourdough (video upcoming soon):
- Mix all
- Add a lot of dough strength
- Wait until sample doubled
- Shape
- Proof 1 hour at room temperature
- Proof 8-24 hours in the fridge at 4°C
- Bake in preheated oven at 230°C for 25 minutes
- Bake another 15-20 minutes without the lid
