How To make Oatmeal Currant Buttermilk Drop Biscuits
1 1/2 cups flour
2 teaspoons double-acting baking powder
1/2 teaspoon baking soda
2 tablespoons sugar
3/4 teaspoon salt
3/4 teaspoon cinnamon
1/2 cup cold, unsalted butter -- cut into bits
3/4 cup quick-cooking oats
1/2 cup dried currants, soak in boiling water -- 5 minutes
2/3 cup plus 2 T. buttermilk
Into a bowl, sift together the flour, the baking powder, the baking soda, the sugar, the salt and the cinnamon. Add the butter and blend the mixture until it resembles meal. Stir in the oats and the currants, drained. Add the buttermilk and stir until the mixture just forms a soft sticky dough. Drop the dough by rounded tablespoon onto a buttered baking sheet and bake the biscuits in the middle of a preheated 425 oven for 15 to 17 minutes, or until pale golden. Makes about 16 biscuits.

OAT BISCUITS RECIPE
(Makes 16 biscuits)
Ingredients:
2 cups ground oats (or oat flour) (200g)
1 tsp salt
1.5 cups cheddar cheese, shredded (180g)
1 cup buttermilk (235ml)
NUTRITIONAL INFO (per biscuit):
97 calories, fat 4.6g, carb 8.8g, protein 4.8g
Preparation:
In a large bowl, combine dry ingredients, ground oats and salt.
Mix in the shredded cheddar cheese.
Pour in the buttermilk and using a wooden spoon mix until the dry ingredients are just moistened.
Transfer the dough to the counter and press with the hands for 2-3 times, no more than that. You don't want to over work the dough.
Roll the dough 1/2 inch thick and cut the biscuits with cookie cutter or any glass you want.
Place biscuits on lined baking sheet and brush with buttermilk.
Bake at 350F (180C) degrees for 20-25 minutes.
Eat warm or store in the box for up to 5 days.

How to make buttery, melt in your mouth Shortbread Cookies using three ingredients you probably have in your pantry. Shortbread cookies are easy to make and taste divine.

???? Shortbread Cookies Ingredients:
1 cup (16 tbsp, 230g) butter
1/2 cup (50g) powdered sugar
2 cups (250g) all purpose flour
2.5 inch cookie cutter
???? Shortbread Cookies Instructions:
1. Preheat the oven to 350F (177C).
2. Using a hand held or stand mixer, beat butter and powdered sugar until light and creamy. Add in flour and mix until mixture resemble crumb texture.
3. Knead the dough with hands until dough forms. Cover the dough with plastic wrap and keep it in the fridge for 30 minutes.
4. Lightly dust the work surface with flour, roll out the dough to a 1/4 inch thick rectangular shape. Using a cookie cutter (I used 2.5 inch round cookie cutter), cut into any shapes you like.
5. Place the cookies on a baking sheet lined with a silicone mat or parchment paper
6. Bake for about 16-18 minutes, or until cookies are pale golden brown.
7. Transfer to a wire rack to cool.
