INGREDIENTS
Scones
1/2 to 3/4 cups heavy cream, plus more for brushing
1 large egg, lightly beaten
2 cups all-purpose flour
1/2 cup rolled oats
1/3 cup dark brown sugar
1 tablespoon baking powder
3/4 teaspoon coarse salt
8 tablespoons (1 stick) cold unsalted butter, cut into pieces
1/2 cup dried sour cherries, chopped
1/2 cup chopped pecans
Maple Glaze
3/4 cup maple syrup
1 cup confectioners’ sugar, sifted
1 tablespoon butter, salted or unsalted
1 pinch kosher salt

Ingredients:
Apple Mix:
20 g granulated sugar
3 tsp cinnamon
5 small apples, peeled and diced
Cake Mix:
400 g flour
50 g granulated sugar
3 tsp baking powder
2 tsp vanilla sugar
300 ml milk
2 eggs
3 tbsp sunflower oil
Brown Sugar Mix:
150 g brown sugar
3 tsp cinnamon
6 tbsp sunflower oil or 120 g melted butter
Glaze:
200 g icing sugar
70 ml milk
9'' X 13'' (23-CM X 33-CM) PAN
Preheat the oven to 200°C (392°F) and bake for 30-40 mins, but keep an eye on it.
Test with a toothpick for doneness!
NOTE: You can adjust the quantity of sugar to suit your taste. Feel free to use less sugar if you prefer a less sweet cake.Enjoy! ????????

BETH’S PEAR SPICE CAKE
Makes a 9x5 loaf
PRINT RECIPE HERE:
INGREDIENTS:
3/4 cup (180ml) of melted butter
1/3 cup (80ml) vegetable oil
¾ cup (135g) brown sugar
3 eggs
1/3 cup (80ml) of water
1 ½ (7.5ml) tsp vanilla extract
1 ¾ (210g) cup flour
1 tsp (5ml) baking soda
¾ tsp (3.75ml) salt
1 tsp (5ml) cinnamon
¼ tsp (1.25ml) ground ginger
¼ tsp (1.25ml) nutmeg
1/8 tsp (large pinch) ground cloves
2 ripe pears, any variety
1 tbsp (5g) old fashioned oats
dust with powdered sugar
METHOD:
Preheat oven to 350F (175C) and spray a 9x5 (23cm x 13cm) loaf pan with baking spray. Set aside.
In a large mixing bowl combine the butter, oil, brown sugar, eggs, water and vanilla. Whisk until smooth.
In a medium sized mixing bowl combine the flour, baking soda, salt, and spices. Whisk until combined.
Add the dry ingredients to the wet ingredients, whisking in thirds until combined.
Transfer batter to the loaf pan. Top with the sliced pears standing upright in alternating pattern. Sprinkle with oats.
Bake for 40-45 minutes until golden brown and risen and a toothpick comes out clean.
Allow to cool and remove cake from the tin and slice!

Apple crisp is a simple dessert of apples topped with a crumbly, sweet pastry mixture, like a streusel, baked until brown and crisp. Isabel Ely Lord created the earliest written record of this recipe in 1924 in the Everybody's Cookbook. However, it didn't become popularized until WWII when pastry products like sugar, butter, and flour were rationed. The more elaborate apple pie was out, and the apple crisp was in.

• 3 tablespoons dark rum
