Strawberry Jam Recipe :
4 to 5 large strawberries ( diced)
the Juice of half a lemon
2 table spoons of Stevia or Sugar (as preferred)
4 tablespoons of water.
Heat a pot on medium high and add all the above mentioned ingredients. keep stirring till you get a jam like consistency. remove it off the flame, keep aside to cool down, add more water if its too sticky. once cooled down, add it on the cheesecake.

Ingredients: 24-26 servings
2 cups almond flour
½ teaspoon baking powder
½ teaspoon xanthan gum
⅛ teaspoon salt
1 cup sugar substitute (I used Sukrin gold) You can add more if you want ????
150 grams unsalted butter, softened
1 egg
½ teaspoon lemon juice
2 teaspoons vanilla extract
⅓ cup full fat sour cream
1 ½ cups fresh blueberries
125 grams cream cheese, cut into 1/4 inch pieces and frozen
Notes:
Make sure to start with the cream cheese before starting the whole process.
Cut the cream cheese into small pieces. It's easiest to do this when the cream cheese is very cold, but not frozen, around 30 to 60 minutes in the freezer or until very cold.
Then slice into 1/4-inch pieces, and place the pieces back into the freezer until completely frozen, about 1 to 2 hours.

I have used hung curd as a replacement and for 1.5 cup of hung curd you will need to hang about 3 cups of curd overnight!

Ingredients :
1 + 1/2 cup crushed lotus biscuits
5 tbsp melted butter
1 + 1/2 cup hung curd
1/2 cup heavy cream/fresh cream
1 cup condensed milk
2 tbsp cornflour
Biscoff spread (for topping)
Whipped cream (for garnish)
Lotus biscuit crumbs ( for garnish)
Method :
1. In a large bowl, add the crushed biscuits with melted butter and combine till all the crumbs are coated.
2. Transfer the biscuit base into a lined springform pan and using the back of a spoon, press down to form an even cheesecake base. Refrigerate for 15-20 mins.
3. Meanwhile in another bowl, add hung curd, cream, condensed milk and cornflour. Whisk everything together just until a smooth batter is formed with no lumps.
4. Pour this cheesecake batter over the chilled biscuit base and transfer the springform pan into a larger baking dish. Pour hot water into the larger dish to create a hot water bath.
5. Bake this in a pre-heated oven at 170 degree Celsius for 40-45 mins.
6. Once baked, refrigerate for at least 4 hours or overnight.
7. Once set, finish it off by spreading a generous layer of biscoff spread, some whipped cream dollops and sprinkling crush biscuits over it.
