The Secret to the Best Instant Pot Pork and Sauerkraut
If you think you don't like sauerkraut---this recipe may change your mind! With one secret ingredient, this dish is perfectly balanced! The pork is cooked to perfection and is tender and juicy! This easy instant pot meal is a traditional recipe for New Years Day, but is perfect all year long!

2-3 pound pork loin
salt and pepper
16 ounces sauerkraut, drained of extra liquid
1 cup apple juice for 6 qt and 1.5 cups for 8 qt.
1 apple sliced
1 onion sliced
2 cloves crushed garlic
INSTRUCTIONS
Cut the pork loin into 2 inch large chunks.
Liberally season pork loin with salt and pepper on all sides.
Place pork in pressure cooker. Top with apples, apples, onions, and garlic. Add in apple juice to pressure cooker. Top with sauerkraut.
Cook on high pressure for 15 minutes.
Once cook time has elapsed allow pressure to release naturally, or for at least 15 minutes.

shared with you the way Aunt Coco gave it to me....
6 lb. pork roast
3 large cans of sauerkraut, drained
3 T. brown sugar, not leveled
3-4 bay leaves
3-4 garlic buds
2 medium apples
1 t. salt
Punch holes in the roast and push in the garlic buds. If they are small, use more. Sprinkle the salt on the roast and place it in the roaster and add about 1 cup water. Place in oven at 300 degrees and bake until almost tender. If it is baking rather dry, add a little more water. When about tender add the kraut around the roast and place the quartered apples and bay leaves on top. Sprinkle the brown sugar and replace in over for approximately 1/2 to 1 hour and apples are well done.
If kraut is very sour it can be rinsed before placing around the roast, and you may want to add a little more sugar if it is too sour for your taste. Before serving remove the bay leaves and discard.
If the roast and kraut are done before serving time, don't fret, for it holds well.
Those of family reared in the south always included blackeyed peas for New Year's.

Easy pork sauerkraut recipe
Ingredients
Pork loin
Sauerkraut
Potato
Butter
Sour cream (optional)
Slowcooker pork loin and sauerkraut for 6 hours till tender. I start with high heat for couple of hours then low till tender.
Boiled peeled cut potato for 1 hour. I used fork to check potato are tender. Drained water then mashed potato with butter and sour cream.
Then serve. Enjoy!

1 jar or package (32 oz) sauerkraut
2 medium apples, peeled, sliced
1 teaspoon caraway seed
1/4 cup apple juice or water (I also added pineapple juice)
1 boneless pork roast (2 1/2 to 3 lb), string removed, trimmed of fat
6 small red potatoes (about 18 oz), cut in half
Mustard Sauce
3 tablespoons Dijon mustard
2 tablespoons packed brown sugar
Brown the pork on all sides. Remove the browned meat and add a roughly chopped onion and apples. You can add carrots too, if you like. Place sauerkraut into slow cooker. Pour 1 can of apple juice and 1 of pineapple juice over it. Place the onions and apples on top of the sauerkraut, sprinkle caraway and then add the roast on top.
Cover; cook on Low setting 7 to 8 hours.
In small bowl, mix sauce ingredients. Remove roast from slow cooker; place on serving platter. Cut roast into slices. Arrange potatoes around slices. With slotted spoon, remove sauerkraut mixture from slow cooker; place in serving bowl. Serve roast slices and potatoes with sauerkraut mixture and mustard sauce.

Today I’m sharing a classic New Year’s Day dish—Pork & Sauerkraut! Some say that because pigs “root forward,” the pork represents moving forward into the new year. Additionally the sauerkraut (fermented cabbage) represents increased wealth due to its green color. Whether or not you believe the superstition, this easy, flavorful, crockpot Pork & Sauerkraut is absolutely worth making. Happy New Year!

LOGAN FAMILY FARMS:
Pork & Sauerkraut
3 lb. boneless pork pot roast (or pork shoulder)
2 lb. bag of sauerkraut
2 gala apples
1 large sweet onion
salt, pepper, garlic powder
1 Tbsp. brown sugar
Peel and dice the apples. Peel and thinly slice the sweet onion. Spray the inside of a slow cooker with baking spray to prevent sticking. Place the pork pot roast inside the slow cooker. Season with salt, pepper and garlic powder. Pour the sauerkraut and its liquid all over the surface of the pot roast. Place the onions and apples evenly over the sauerkraut. Sprinkle the brown sugar over top. Cover and cook on LOW for 8 hours. Use two forks to shred the meat and mix everything together. Serve by itself, on sandwich buns, over mashed potatoes or egg noodles. ENJOY!
