Roasted Pork Tenderloin with Squash and Apples

This dish has been on repeat at my house for the last three fall seasons. The reason? Pork tenderloin is super easy and quick to make! I always have some in the freezer ready in case I need a quick meal that tastes like it took all day. And the squash and apples are the perfect side dish for the pork. They're roasted together with warms spices and have the perfect seasonal flavor!

Ingredients:
- 3 lb squash, 1 large or 2 small
- 2 lb apples, 4 large
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp pepper
- 4 sprigs thyme
- 2 lb pork tenderloin, cut into 1-pound pieces
- 2 tbsp olive oil
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp cinnamon
- 1/2 cup apple cider
- 1 tbsp Dijon mustard
- 1 tbsp butter
- Preheat oven to 425°F.
- Peel squash, slice in half, and remove seeds. Cut into 1/2-inch slices and place in roasting pan. Drizzle with olive oil, salt, and pepper. Mix to evenly coat the squash with the oil and spread in an even layer. Add the thyme sprigs. Roast in preheated oven until squash just begins to become tender, 20 minutes.
- Next, prepare the tenderloin. Combine the salt, pepper, garlic powder, onion powder, and cinnamon. Stir to combine and sprinkle over the dry tenderloins. Rub into the meat.
- In a large 12-inch skillet, heat olive oil over medium-high. Once the oil is hot, sear the tenderloin until browned all around, about 3-5 minutes. Set aside.
- Cut apples into quarters and remove the core. Cut each quarter in half again.
- When the squash is just beginning to become tender, remove from oven and add apples. Stir to combine and spread in even layer. Add tenderloin on top, adding any juice that gathered under the meat.
- Continue to roast until the apples are tender and the pork registers 145°F, about 20 minutes. Remove from oven and let rest for 10 minutes.
- While resting, prepare pan sauce. Heat skillet over medium-high for 2 minutes. Add apple cider and bring to a boil. Turn down to a simmer and scrape the browned bits from the bottom. When the apple cider is reduced by half, turn off the heat and whisk in Dijon mustard and butter.
- Cut pork and pour the sauce over the pieces. Serve with squash and apples.

It sometimes feels like chicken or beef are the only way to go, but every time we cook pork we’re reminded of how amazing it can be and kick ourselves for not making it more often. Pork tenderloin is a seriously under-appreciated cut of meat that we are more than happy to shed light on, especially when we’ve made it as easily as we did here. We give you slow cooker hasselback apple pork loin.
It might sound like there’s a lot going on, but we promise it’s super easy to whip up this delicious dinner, plus it looks really cool when you do it this way. If you’ve heard of hasselback potatoes, you’ll know that this dish consists of making a series of parallel cuts in the pork loin, then stuffing each cut with thinly sliced apple. Put it in the slow cooker, along with some potatoes and onions, and a tasty honey balsamic sauce and you’ve got yourself a great meal! Forgo your usual, boring chicken dinner and check this out - everyone will love it!
Roast Rack Of Pork With Apples And Maple Sauce - Glen And Friends Cooking
This Roast Rack Of Pork With Apples Recipe is an elegant dinner alternative to Beef Rib Roast. Moist and delicious pork roast… and so easy to cook!
Ingredients:
3 lb (1.5 kg) pork rib roast
2 Tbsp (30 mL) pure maple syrup
2 Tbsp (30 mL) butter
2 red onions, cut into thick slices
2 Tbsp (30 mL) chopped fresh rosemary
1 tsp (5 mL) each salt and ground black pepper
3 tart apples, cored and cut into thick slices
3 Tbsp (45 mL) brown sugar
1 Tbsp (15 mL) cider vinegar
2 Tbsp (30 mL) olive oil
Method:
Preheat oven to 450°F (230°C).
Slice onions and toss them into a roasting pan.
Chop up the rosemary leaves and mix with the salt and pepper.
In a small pan melt the butter and maple syrup.
Brush the melted butter mixture all over the roast, and then rub in the
rosemary mixture to fully coat.
Place the roast overtop the onions and place in the oven.
Mix the sliced apples with the brown sugar and cider vinegar.
After 20 minutes arrange apples around the pork roast; then reduce temperature to 325°F (160°C).
Continue roasting for another 1 1/2 hours, or until the internal temperature registers 155ºF-160°F.
Remove from oven, cover loosely with aluminum foil and allow to rest for 10 minutes.
