How To make Mustikkapiiras(Blueberry Yogurt Pie)
CRUST:
1/3 c Butter or margarine
1/4 c Sugar
1 Egg
1 c Unbleached white flour
1/2 ts Baking powder
FILLING:
2 Eggs
3 tb Sugar
1 c Plain yogurt
3 tb Fresh lemon juice
1 t Pure vanilla extract
2 c Blueberries, fresh or frozen
Butter and flour a 9 or 10 inch pie pan. Preheat the oven to 350. Using an electric mixer or by hand, cream the butter and sugar. Add the egg, and blend well. Combine the flour and baking powder and mix them into the wet ingredients to form a soft dough. With flour dusted fingers, pat the sticky dough into the bottom of the buttered and floured pie pan. Push the dough up to cover the sides of the pan. Refrigerate for at least as long as it takes to make the filling. Mix all the filling ingredients, except the blueberries, until smooth. Put the berries into the pie shell and gently pour in the filling so the berries are coated and evenly distributed. Bake for 50 - 60 minutes, until the crust is browned and the custard has set. -500g of creamy quark (Finnish Rahka)

You NEED To Try This Finnish Pie
Mustikkapiirakka Recipe
Ingredients
Crust:
100 g unsalted butter, at room temperature
100 g sugar
1 egg
100 g rye flour
100 g AP flour
1 tsp baking powder
Pinch of cardamom
Filling:
250 g (about 2 cups) of Saskatoons (the Finnish recipe calls for blueberries)
250 g sour cream
1 egg
1/4 tsp cardamom
1 tsp vanilla
4 tbsp sugar
Instructions
Preheat the oven to 375° F.
Lightly butter a (10″) tart or pie pan
Crust:
Cream butter and sugar
Mix in the egg
Stir in the flours, pinch of cardamom, and baking powder until combined into a pliable ball.
Turn out the dough into the tart/pie and spread to an even layer across the bottom and up the sides.
Use a fork to prick the bottom and bake for 10 minutes.
Filling:
Whisk together sour cream, egg, sugar, vanilla, and cardamom.
Spread the berries evenly across the crust.
Pour the filling over and around the berries and spread with a spatula.
Return to the 375F oven for about 30 minutes.
When done it should look brown around the edges and the filling is set.
I let mine cool in the fridge for a few hours.

Mustikkapiirakka (Finnish Blueberry Pie)
I am still getting to know my Finnish heritage, and learning more about the cuisine. This blueberry pie recipe is quite simple and VERY tasty! Definitely give it a try!
Mustikkapiirakka - Finnish Blueberry Pie????
INGREDIENTS
For the pie crust:
* 1/2cup milk warmed,
* 1 tsp. baking powder
* 1/2 tsp salt
* 1/2 cup sugar
* 2large egg
* 2 cups all-purpose flour
* 100g melted butter
* 4 cups blueberries
* 1tsp. vanilla extract
* For the filling:
* 2cup fresh blueberries or use frozen
* 1cup Viili (Finnish stretchy yogurt) - if unavailable, use plain full-day Greek yogurt or full-fat sour cream
* 1 large egg
* 1T.Light brown sugar
* 1 tsp. vanilla extract
Preheat the oven to 375 degrees.
Lightly oil or spray your pan,
To make the pie crust: add sugar and butter mix it until fluffy and light yellow. Mix in the egg,
Now in a different bowl mix the flour and baking powder,vanilla extract just until mixed.
Turn the dough, which should be malleable, but mostly in a ball, into your greased pan and use your hands to push it into an even layer across the bottom and up the sides of the pan
To make the Filling: whisk together the creme or yogurt, egg, 1T. sugar, vanilla and salt.
Spread the blueberries evenly across your crust. Carefully pour the creme of yoghurt mix filling over and around the berries until the crust is filled evenly.
Carefully return to the oven and bake for 30-35 mins. until the edges are golden brown
