How To make Mustard Greens and Ham Hocks
2 pounds mustard greens or collard greens
2 pounds green cabbage
3 ham hocks
smoked
(about 2 pounds) 3 quarts water
1 tablespoon salt
1 teaspoon freshly ground black pepper
1 teaspoon sugar
1 teaspoon thyme :
leaves
4 medium idaho potatoes -- peeled
(about 2 pounds) cut into quarters
1. Wash the greens thoroughly and drain them by shaking off any excess water. R emove the very thick part of the stems from the greens and coarsely chop the lea ves. Cut the cabbage into quarters and cut the core from the cabbage pieces. C oarsely chop the cabbage and set aside.
2. Put the ham hocks and enough cold water to cover them in a 4-quart saucepan o ver high heat. Heat to boiling, reduce the heat to simmering, and cook the hock s, covered, until almost tender, about 1 1/2 hours.
3. Stir in the chopped greens, salt, pepper, sugar, and thyme. Cook 30 minutes. Add the cabbage and potatoes and cook until all vegetables are tender, about 3 0 minutes. Check the seasonings and serve hot.

A SUNDAY DINNER TRADITION IN THE SOUTH/OLD SCHOOL COLLARD GREENS/SMOKED HAM HOCKS
OLD SCHOOL COLLARD GREENS WITH HAM HOCKS AND SALT BACON
GREENS are so simple and easy to make
It's just some good pork and seasoning
Recipe
4-5 bunches collard greens(washed and cleaned)
1 cup white vinegar
2 tablespoons salt and pepper
3-4 ham hocks
1 cup chopped onions
Clean and wash greens
In large pot add water, vinegar ,onion and ham HOCKS
Simmer for 60-90 minutes or until meat is tender
Remove meat and add greens
Add salt and pepper and simmer until greens are tender(about 45 minutes)
Add ham HOCKS back to pot and simmer an additional 10 minutes

Ingredients I used for this Collard Greens Recipe:
* 3 Pounds Or So Collard Greens (These were 1 pound bunches)
* 3 Ham Hocks
* 3 Ham Shanks
* 1 Large White Onion Diced
* 3 Cloves Garlic Chopped
* 1 1/2 Tsp. Chicken Bullion
* 3/4 Tbsp. Cajun Seasoning
* 3 1/2 Tbsp. Brown Sugar
* 1 Tbsp Red Pepper Flakes (to Taste)
* Enough Water To Cover
* 3 Tbsp. Apple Cider Vinegar
* Salt to taste

Ingredients
1 16oz bag of black eyed peas
Ham hocks
1 bay leaf
1 small onion diced
2 stalks celery diced
Half bell pepper diced
3 garlic cloves minced
1 jalapeño seeds removed (optional)
2 tbs tomato paste
8 cups chicken broth or water
Directions
Place ham hocks bay leaf and half of the onions in pot add broth to cover bring to boil and reduce to simmer for 2 hours. Next add in all remaining ingredients and let peas cook until desired tendernesses once done taste and adjust seasoning and remove bay leaf Thanks for Watching ????
