How To make Mustard Chicken with Sun Dried Tomatoes
30 grams butter
4 chicken breast fillets
2 tablespoons olive oil
4 green shallots
chopped
1 clove garlic :
crushed
1 tablespoon seeded mustard
1/4 cup sun-dried tomatoes -- drained and chopped
Heat butter in pan, add chicken, cook on both sides until lightly browned, remove chicken from pan. Heat oil in pan, add shallots, garlic, mustard and tomatoes, cook, stirring, until shallots are soft. Return chicken to pan, cook, covered, about 10 minutes, or until chiken is tender.

Step 1:
Ingredients:
1. 4-6 chicken thighs
2. Salt
3. Pepper
4. Paprika
Direction:
Season chicken thighs with salt and pepper and paprika. Fry each side with oil in a pan, light oil for 5-6 minutes. Not deep fry just pan fry. Take the chicken out the pan and leave all the juices. The chicken shouldn’t be fully cooked here. We’ll finish cooking at the end. Just the outside should be nice and cooked. Inside maybe like 70%
Step 2:
Ingredients:
1. 1 large onion
2. 4-5 garlic
3. 1 tablespoon of sun dried tomatoes
4. 15 cherry tomato’s cut in half
5. 1.5 cups of beef stock
6. 1/4- 1/2 cup heavy cream
7. 1 cup of Parmesan (add more for taste)
8. 2 stems of rosemary
9. 1 tablespoon Italian seasoning
Step 2 directions:
1. Add in onions and cook down for about 4-5 minutes.
2. Add in cherry and sun dried tomatoes and cook for another 5 minutes
3. Add in garlic and rosemary and cook for 2 minutes
4. Add in beef stock and simmer for 3 minutes
5. Add in heavy cream and simmer for a minute (at this point there should be enough to cover the chicken when you put it in) add some more if needed. The sauce should still have a orange ish color.
6. Add in Italian seasoning and Parmesan cheese and simmer on low for 1 minute
7. Add in chicken and simmer with lid for 10-15 minutes to finish cooking the chicken. Smaller thighs 10 minutes, larger thighs 15.
8. Let it cool for and enjoy

This creamy garlic sun-dried tomato chicken is easy to make, tastes delicious and can serve 3-4 people for less than $7 per portion. It’s a win-win recipe.

Ingredients -
2 Tbsp (40ml) - Sun-Dried Tomato Oil (The oil that the tomatoes are soaked in)
3 (250g-300g Each) Large Chicken Breast, Butterflied & Halved
2 Tbsp (28g) - Unsalted Butter
1 - Small Brown Onion, Diced
5 - Garlic Cloves, Minced or Grated
1/3 Cup (80ml) - White Wine (Substitute With Chicken Stock)
3/4 Cup (180ml) - Chicken or Vegetable Stock
1/2 Cup (100g) - Sun-Dried Tomatoes
1 Tbsp (20g) - Dijon Mustard
1 Cup (250ml) - Thickened Cream (Whipping or Double Cream)
20g (0.7oz) - Parmesan Cheese, Freshly Grated
5g (0.2oz) - Thyme, Roughly Chopped
5g (0.2oz) - Oregano, Roughly Chopped
1 tsp (2g) - Dried Chilli Flakes
1 Cup (15g) - Fresh Basil Leaves, Roughly Picked
Seasoning to Taste
If you wish to use dried herbs instead of fresh use 1 tsp each of dried.
For chicken thighs instead of chicken breast, sear the chicken for 6 minutes on each side
