???? Classic Spicy Moroccan Fish in Rich Sauce! ????️
This recipe by @somethingnutritious is a delightful blend of vibrant spices, succulent salmon fillets, and a luscious sauce that will transport your taste buds straight to Morocco. ????✈️

Ingredients:
1 pound/450g salmon fillets (feel free to use any fish you prefer)
⅓ cup of olive oil
1 red bell pepper, sliced into strips
1 long green pepper (or 2 jalapeno peppers), sliced into strips
½ cup of chopped cilantro
2 carrots, peeled and cut into strips
1 russet potato, peeled and cut into 1” slices (optional)
6 garlic cloves, peeled
1 tbsp tomato paste
¾ to 1 cup of water
1 tbsp sweet paprika
½ tbsp hot paprika (adjust to taste)
1 tsp coarse salt
½ tsp cumin
¼ tsp turmeric
1️⃣ Heat a large sauté pan over medium heat and coat the bottom with the olive oil. Add all the veggies to the pan and sauté for 2-3 minutes. Sprinkle in the paprika, salt, cumin, turmeric, and tomato paste. Stir and cook for an additional 2-3 minutes.
3️⃣ Add half of the chopped cilantro and around ¾ cup of water to the pan. Stir everything together, cover, and cook for 12-15 minutes, until the veggies reach a tender perfection.
4️⃣ Give it a taste and adjust the salt and spice levels according to your preference. If you're craving an extra kick, add more hot paprika or red pepper flakes. Lightly season the fish fillets with salt, then place them into the pan, ensuring they're generously coated with the flavorful sauce, at least ¾ of the way up. If needed, add another ¼ cup of water to enhance the sauciness. Spoon the sauce over each fillet, top with the remaining cilantro, and cover the pan.
5️⃣ Cook on a low flame for 20-25 minutes, spooning the delectable sauce over the fish halfway through. Just before serving, garnish with refreshing lemon slices and squeeze some fresh lemon juice over the top to add a citrusy zing.

INGREDIENTS:
1 whole fish (preferably Rouget or Peagot) around 2 pounds / 1 kg
4 medium-sized tomatoes
Decoration: 1 lemon and 1 tomato for decoration
Charmoula ingredients:
A bunch of cilantro (around 60 grams)
4-5 large garlic cloves (peeled)
2 teaspoons paprika
1 teaspoon ground cumin
¼ teaspoon red hot chili pepper (to taste)
1 teaspoon salt
2 tablespoons vegetable oil
2 tablespoons water

Whole Roasted Fish in Chermoula: A Classic Moroccan Recipe
Ingredients
2 whole fish 1.5 to 2lbs each, cleaned
1/3 cup fresh parsley, finely chopped
1/3 cup fresh cilantro, finely chopped
5 cloves garlic, minced
1T paprika
2t ground cumin
1/2 tsp black pepper
1/2 tsp salt
1/4c fresh lemon juice
6T olive oil
1 small or 1/2 large @mina preserved lemon, rinsed and chopped (rind and pulp)
1.5t @mina spicy harissa
1T tomato paste
3 medium potatoes, peeled and sliced into 1/4” rounds
3-4 carrots, peeled and sliced in 1/4” rounds
2 bell peppers, cut into rings
1 lemon, thinly sliced
2 tomatoes, sliced (optional)
12 @mina Moroccan purple or green olives
Instructions
Chermoula (marinade) can be made using a mortal and pestle or in a a food processor. Mash or blend garlic, salt, parsley, cilantro, paprika, cumin, black pepper, lemon juice, olive oil, preserved lemon, harissa and tomato paste until well combined. Consistency should be that of a thin paste. Adjust taste based on your preference. Set aside.
Score fish by making several deep cuts in the flesh about 1.5” apart on each both sides of the fish. Rub a generous amount of chermoula inside and outside of the fish. Cover, refrigerate for at least 2 hours. Reserve remaining chermoula.
When you’re ready to bake the fish, thin the reserved chermoula with a few tablespoons of water. Toss all vegetables in several tablespoons of chermoula and then arrange to your liking in a baking dish large enough to hold the fish. Place fish on top of vegetables and top with any remaining chermoula. Add olives and lay lemon slices across the fish. Drizzle with olive oil.
Bake covered at 375 for 30 minutes. Uncover and increase oven temperature to 400 degrees. Continue to bake until fish is flaky, vegetables are cooked and nicely browned. It took an hour of cooking time in total for mine to be done.

FISH TAGINE WITH VEGETABLES
Sauce for the fish balls tagine recipe
Add 2tbsp of olive oil in your pan
4 cloves of minced garlic
2 large diced tomatoes
2 bell peppers cut in strips
1 cubano pepper ( optional)
1 cup or 200g of chickpeas
1/2 bunch of coriander
2tbsp paprika
1 tsp curcuma
1/2 tsp salt
1/4 tsp of pepper
1/2 cup hot water
Moroccan fish balls recipe
in a separate bowl put 1 cup or 250 g of minced salmon or fish pieces put in your food processor
1 cup or 250 g of white fish here I am using some cod
Add your fresh herb mixture
add 2/3 cup or 70 g bread crumbs you can also use gluten-free breadcrumbs we love the Jason brand ( not sponsored!)
2 egg yolks ( that is the secret to have smooth fish balls)
1 teaspoon or 2 g of cumin
1 teaspoon 2.3g of paprika
mix everything together
add half a teaspoon of salt
and a quarter teaspoon of pepper
mix again and put everything in the fridge
