How To make Monkfish with Almonds, Sweet Red Peppers & Sa
2 lb Monkfish, in large whole
-filets, skin and membranes -removed 2 tb Olive oil
3 lg Garlic cloves, minced
3 lg Red bell peppers, cored,
-seeded, cut into strips -lengthwise 3/4 c Whole almonds, toasted
1/2 ts Saffron threads
1/2 c Dry white wine
1/2 c Fish stock
1/2 ts Salt
1/2 ts White pepper, or to taste
1 Ounce sliced almonds,
-toasted, for garnish
Preheat the oven to 350F. Bake the fish in a buttered baking pan for 15 minutes. Let cool. Cut into medallions and set aside. Reserve the baking juice. Heat the oil in a large skillet, add the garlic and peppers and saute over low heat for 20 minutes, stirring occasionally. Grind whole almonds finely in a food processor and add to the skillet with the saffron, wine, stock, reserved fish juices, salt and pepper; cook over medium heat for 5 minutes. Transfer to a blender or food processor and puree. Return the sauce to the skillet, add the fish medallions, and heat through. Serve immediately, with sliced almonds sprinkled on top. Serves 6. PER SERVING: 370 calories, 34 g protein, 8 g carbohydrate, 23 g fat (3 g

Thai-Style Stir Fried Mussels by Lee Kum Kee

Recipe - serves 4
Ingredients:
450g frozen blue mussels
3 ginger slices
2 garlic cloves
¼ red onion [cut into pieces]
2 red chillies [diced]
20g each of green, red and yellow bell peppers [diced]
1 lemongrass [sectioned]
1 lime [squeeze the juice]
3 kaffir lime leaves [shredded]
Dash of sweet basil
Seasoning Mix:
3½ tsp Lee Kum Kee Chiu Chow Chilli Oil
2tsp. fish sauce
2tsp. sugar
1Tbsp. water
Method:
1.Heat half pot of water and place mussels inside. Scoop up the mussels when they are half-cooked.
2. Stir fry ginger, garlic, onion, bell peppers and chilli in 1 Tbsp of oil. Add mussels, lemongrass, half of the kaffir lime leaves and seasoning mix, then stir well.
3. After the mussels are cooked, add the lime juice and sweet basil, stir fry lightly then serve. Sprinkle the remaining lime leaves on top as a garnish.

골뱅이무침
[재료]
통조림골뱅이 1캔(400g)
양파 1/2개(100g)
당근 1/6개(50g)
오이 1/2개(100g)
양배추 2/3컵(60g)
대파 2/3컵(60g)
청양고추 2개(15g)
북어채 1컵(30g)
*양념장 재료
고추장 1/3컵(80g)
황설탕 1/3컵(50g)
식초 1/3컵(60g)
굵은고춧가루 1/2큰술(3g)
고운고춧가루 1/2큰술(3g)
참기름 1큰술(8g)
깨소금 1/2큰술(3g)
[만드는 법]
* 양념장 만드는 법
1. 깨소금을 제외한 분량의 양념장 재료를 볼에 넣고 섞어 양념장을 만든다.
* 골뱅이무침 만드는 법
1. 골뱅이는 1/2 크기로 세로로 잘라 준비한다.
2. 양파, 양배추는 채 썰어 준비한다.
3. 오이, 당근은 반으로 갈라 편 썰어 준비한다.
4. 청양고추는 어슷하게 썰어 준비한다.
5. 북어채는 골뱅이 국물에 가볍게 적셔 준비한다.
6. 손질된 모든 채소와 골뱅이를 볼에 담는다.
7. 채소와 골뱅이에 양념장을 넣어 버무린다.
8. 완성 접시에 골뱅이무침을 담고 깨소금을 뿌려 마무리한다.
* 기호에 따라 채소의 종류와 분량은 조절한다.
* 양념장에 간 마늘을 추가하면 색다른 맛을 낼 수 있다.

[Ingredients]
1 Can of Canned Whelk (400g)
1/2 Onion (100g)
1/6 Carrot (50g)
1/2 Cucumber (100g)
2/3 Cup Cabbage (60g)
2/3 Cup Green Onion (60g)
2 Cheongyang pepper (15g)
1 Cup Dried pollack (30g)
*Sauce Ingredients
1/3 Cup Red Pepper Paste (80g)
1/3 Cup Brown sugar (50g)
1/3 Cup Vinegar (60g)
1/2 tbsp Coarse Red Pepper Powder (3g)
1/2 tbsp Fine Red Pepper Powder (3g)
1 tbsp Sesame Oil (8g)
1/2 tbsp Ground Sesame Seeds (3g)
[Directions]
* How to make sauce
1. Mix all the ingredients except for ground sesame seeds in a bowl.
* How to make spicy whelk salad
1. Cut the whelk in half vertically.
2. Slice the onion and cabbage.
3. Slice cucumber and carrot in half and slice them.
4. Slice Cheongyang pepper diagonally.
5. Soak the dried pollack in whelk juice.
6. Put all the vegetables and whelk in a bowl.
7. Mix the sauce with vegetables and whelk.
8. Put the mixed whelk on a plate and sprinkle some ground sesame seeds.
* Adjust the type and amount of vegetables according to preference
* Add minced garlic to the sauce for a different taste.
