These easy to make grilled sweet peppers are the perfect summer side dish. They are super healthy, delicious and a great option for paleo and low carb lifestyles.
How do I grill peppers?
Wash and dry the peppers before placing them on the grill. Preheat your grill to about 350°. Place the peppers on the hot grill and allow them to cook until they begin to char (get black marks). When one side has become charred, flip the pepper and continue to cook until all the sides of the pepper have char marks.
What’s the difference between roasted and grilled peppers?
Peppers can either be roasted in the oven or charred on a grill. Roasting takes a bit longer and the oven heats up the house during the summertime. Grilling peppers is quicker and you get to enjoy the smokey flavor.

Which peppers are better for grilling?
Any style of bell pepper or jalapeño is wonderful for grilling. We find it easier to leave the pepper as a whole to prevent any peppers from falling into the grates. However, if you have a grill basket, you can slice them before grilling!

How to Make Grilled Peppers With Olive Oil and Capers
Step 1 – Wash and dry the peppers.
Step 2 – Heat up the grill. Once the grill is hot, place the whole peppers.
Step 3 – Char the Peppers. Cook, turning often, until the skin is blackened and blistered, about 3-5 minutes on each side.

Step 4 – Allow to Cook. Place the peppers in a plastic bag and let sit for 10 to 15 minutes.

Step 5 – Remove the seeds. Cut the peppers in half, removing the core and membranes. Cut into the size of strips you desire (or leave halved).

Step 6 – Mix with other ingredients. Place the peppers in a bowl with the minced garlic, salt and pepper, capers, parsley and enough oil to lightly coat.
Serve at room temperature.

This recipe was a big surprise for us. We originally slotted it into our content calendar as a simple, straightforward one-minute CITY SLICKER VIDEO that you could watch and replicate in no time. Everything was going to plan; the ingredients were prepped, the barbecue was heating up and the presentation plate was sitting on the counter ready for the beauty shot. Then the peppers hit the grill, and the result was so amazing, we knew a quick video would not do it justice!
Here’s the rundown on why this simple recipe for GRILLED SWEET PEPPERS SIDE DISH has enchanted us so completely:
ITALIAN FRYING PEPPERS – I first saw these - dare I say cute? - little gems at a local farmer’s market up here in cottage country. The purveyor was matter-of-fact about their sweetness and that they had just been plucked from the pepper plants that morning. How could I not purchase them considering that inducement?
Cutting them just below the crown, from cap to tip, makes grilling them easy but also leaves them intact so that you end up serving whole grilled peppers, seeds and all. That in itself is pretty sweet.
GARLIC – Finely dicing the three cloves of garlic before tossing on the grilled peppers immediately set off an olfactory overload. Just the thought of how this pungent culinary essential would play off of the grilled vegetable got us excited.
FRESH DILL – Chopping up the fresh dill had a similar effect as the garlic, but it comes with a caveat - when buying the fresh dill, look for large stems with the flower of the plant still attached. You’ll need the flowers to achieve the stellar presentation we’re recommending.
GRILLING – The grilling of the peppers need not be complicated. Grill them on a medium-high heat, about 500°F, and do so with the barbecue open the entire time. Staying close to the grill to turn the peppers every few moments is also suggested to prevent them from burning – the goal is to brown the skins, not blacken them.
TOSSING & TIMING – The final assembly of the peppers involves nothing more than drizzling them with a bit of oil and balsamic vinegar before tossing them with the garlic, dill and salt and pepper to taste. After that, let the peppers cool down naturally before serving. They should be served at room temperature.
PRESENTATION – Presenting this GRILLED SWEET PEPPERS SIDE DISH can be a thing of beauty, especially if you have those dill flowers previously mentioned on hand. Placing them down like a collar along the rim of a round plate before you place the peppers on top in the centre of the plate completes this stunning look.

Hey, y'all it's Grilla Girl here. We're still working with the side dishes to go with my prime rib. What is the easiest side dish that possibly could you make? Roasted peppers! They're so delicious, I've went and bought a bag and it's a one-pound bag of these tiny little sweet peppers. It's pretty easy to do what I do is I just cut the top off, cut it off just like that, toss it,
cut in half. Now usually when you cut it in half, one side will have the seed pod in it. Take your finger, dig it out. Pretty easy!
So then I've got my peppers all sliced on my trusty rack that of course I sprayed with Pam, all in halves and I'm gonna do something very simple. I'm gonna spray them with olive oil Pam. Just kind of get it all on the outside so they're all coated where they're a little bit shiny you'll see and then I'm gonna sprinkle them with garlic salt. Toss them over, little more garlic salt. Simple! Now a little bit of black pepper or steak seasoning.
I'm still cooking with the Hickory because I'm keeping the Hickory flavor throughout the prime rib,
potatoes, all the side dishes I've cooked. I'm gonna put these on or you could cook them with the potatoes because it won't hurt if any of this drips, it will just flavor the potatoes.
Put them on the top rack, 350 for about 15 to 20 minutes max and they'll be nice and soft and a delicious side dish to go with your prime rib. So I've added the peppers because they only take about 15 or 20 so they'll come out at the same time. There are the peppers!
