How To make Grilled Sweet Peppers
4 tb Red wine vinegar
1 tb Dijon mustard
2 tb Red onion, minced
4 Garlic cloves, minced
Pepper, to taste 2 lg Red bell peppers, quartered
2 lg Green bell peppers, quarter'
Preheat broiler or grill. In a small bowl, combine the mustard, onion, garlic & pepper. Place bell peppers on the grill or broiler & brush with the mustard mixture. Cook until lightly browned, then turn. Brush the other side & cook until browned & slightly softened. Serve hot or cold with what is left of the marinade.

Grilled Mini Sweet Peppers with a Parsley and Za'atar Sauce
I love grilling peppers of all varieties. However, the mini sweet peppers make for such an excellent side dish that I tend to be a little partial to them. I love serving the grilled mini sweet peppers as an appetizer, as a side dish and anytime we grill anything on the grill at all.
I live in South Florida, so our grilling season is usually Spring because in summer it's too hot and humid.

Ingredients
2 lbs ground chicken
3 large bell peppers, tri colored
1/2 green and red bell pepper, diced
1 small yellow onion, diced
2 tsp jerk seasoning
2 tsp all purpose seasoning
1 tsp smoked paprika
1 Tbsp brown sugar
Juice of 1 lime
1 tsp jalapeño pepper paste or 1 jalapeño, diced
1 tsp garlic paste or 1/2 tsp minced ginger
1 Tbsp garlic paste or 4 cloves minced garlic
1 Tbsp tomato paste
1/4 cup water
1 cup yellow rice
1 can black beans, rinsed and drained
1 cup shredded mozzarella cheese
Fresh chopped cilantro for garnish
Jerk Aioli
1/2 cup mayo
1 tsp jerk paste
Juice half lemon or lime
1/2 tsp mustard
2 Tbsp sweet chili

Throw some red, yellow, and green peppers on the grill for a colorful and delicious side dish.
Step 1: Clean the grill
Clean the grill. For a charcoal grill, light some coals; with a gas grill, set it on high and close the lid. After about 20 minutes, let the grill cool. Then scrape off the burnt-on bits with a steel brush, and end by wiping down the grill with a clean cloth soaked in vegetable oil.
Step 2: Heat the grill
Heat a gas or electric grill to medium. If it's a charcoal grill, wait until the coals are ash-colored.
Step 3: Prepare the peppers
Rinse the peppers and then cut them in half, from top to bottom. Remove the stems, seeds, and the white parts. Coat both sides of each half with vegetable oil.
Tip
Marinate the peppers in balsamic vinegar for 20 minutes before cooking if you like.
Step 4: Place peppers skin-side down
Place the pepper halves skin-side down on the grill. Grill for four or five minutes on each side, turning once with tongs.
Step 5: Peel them
If you plan to peel the peppers, grill them until the skins are blackened, about 5 minutes on each side, and then put them in a closed paper bag until they are cool enough to handle. The charred skin should peel easily.
