Molletes: The Chuco Cooking Show Season 2, Episode 11
Hello everybody, welcome back to the channel. Today we talk about molletes and its Spanish origin and how it was adapted for life in the New World.

Mollete is a type of bread from Andalucia, Spain. They would spice up lard with paprika and spread it on the mollete toasted with some olive oil.
I used 3 Tbsp of pimenton (smoked Spanish paprika) to 1/2 cup of lard and blended it by hand.
In Mexico, the bolillo roll is used and it's spread with beans and cheese. You can use lard to refry your beans and spread them over your bread, top with cheese and bake about 5 to 10 minutes at 400 until the cheese is melted to your liking. Sprinkle it with pico de gallo and you're set! Super simple.
My pico:
1 small red onion, diced
1 plump tomato, diced
1 deseeded jalapeño, diced
1/3 bunch of cilantro, pick the leaves
1/2 lime juice
S&P to taste

A traditional Mexican open sandwich with refried beans and melted cheese served with salsa. Perfect for breakfast, lunch, or as a tasty snack. A snack from Mexico's vibrant cuisine, Molletes are like open sandwiches made with burger buns. The centres of the buns are scooped out and the cup-shaped buns are then baked and filled with a yummy rajma filling.
1. 2 burger buns
2. 8 tsp melted ghee or butter, for brushing
3. 1 tbsp oil
4. 1 green chilli, finely chopped
5. 1 tsp dry ginger powder
6. 1/2 cup tomatoes, finely chopped
7. 2 tbsp Tomato ketchup
8. 1 tsp chilli powder
9. 1 cup boiled rajma (kidney beans)
10. 2 tbsp cumin powder (jeera powder)
11. Salt to taste
12. Cabbage, finely chopped
13. Grated processed cheese or paneer
14. Pickled or fresh Jalapenos, finely chopped
To Be Mixed Into Tomato Salsa
1. 1/2 cup finely chopped tomatoes
2. 2 tbsp finely chopped coriander (dhania)
3. 1 tsp finely chopped green chillies
4. 2 tbsp tomato ketchup
5. 1/2 tsp chilli powder
6. salt to taste
