Here is an easy recipe for a spicy, molasses cookie - really delicious!
Molasses Crinkles
3/4 cup butter
1 cup packed brown sugar
1/4 cup molasses
1 egg
2-1/4 cups all purpose flour
2 tsp baking soda
1 tsp ginger
1 tsp cinnamon
1/2 tsp cloves
1/2 tsp salt
1-1/4 cups raisins
sugar for rolling
375 degrees F for 10-12 minutes

INGREDIENTS
- 3/4 cup shortening
- 1 cup brown sugar
- 1/4 cup molasses
- 1 egg
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1 teaspoon cinnamon
- 1 teaspoon ginger
- 1/4 teaspoon salt
- 1/4 teaspoon ground cloves
DIRECTIONS
Cream the shortening and brown sugar together until fluffy. Add molasses and egg and mix well to completely incorporate. In a separate bowl fitted with a sifting colander, measure flour, baking soda, salt, and spices and sift. Add dry ingredients to the wet and mix just to incorporate. The dough will be dry. Place in an airtight bowl and chill for two hours or overnight.
To bake, make balls with a two-ounce cookie scoop. Dip half of the dough ball in water and then in sugar and place on a baking pan with the sugar side up. Bake at 350 for 10-12 minutes. Let rest on pan for a few minutes before transferring to a cooling rack.
Nick of Thyme - Old Fashioned Molasses Crinkles
This recipe comes from Mom C, Nick's maternal grandmother. Mom C was a great cook - but she was a FABULOUS baker. Almost all the family recipes come from her (except the Greek ones). It's her family that brought us all the German Christmas cookie recipes, too - passed down by her Großmutter. Zimtsterne, linzer, Springerles, Pfeffernüsse, Lebkuchen and more. BUT you'll have to wait until November for Nick of Thyme videos about these cookies...
For now, Nick is making some delicious Molasses Crinkles. Some people call them gingersnaps. From what I know, this is an old Betty Crocker recipe. Mom C stuck to the ingredient list, but she tweaked the baking portion. And we added our own touch. Enjoy!
Ingredients
¾ cup shortening (we normally use soft butter but tried Crisco this time)
1 cup packed brown sugar
¼ cup molasses
1 egg
2 ¼ cups all-purpose flour (we only use King Arthur)
2 teaspoons baking soda
1 teaspoon ground cinnamon (we use Simply Organic Ceylon – the “true” cinnamon)
1 teaspoon ground ginger
½ teaspoon ground cloves
¼ teaspoon salt (aka a “pinch”)
Granulated sugar – we mixed this with King Arthur Cinnamon Sugar Plus (our little tweak!)
Note about spices: If the spices have been sitting around your spice cabinet for a while, then use “heaping” portions. In other words, increase the amount of each spice slightly if it’s not fresh. And if you’re curious to know what we mean by Ceylon and “true” cinnamon, then read here:
Directions:
Cream together the shortening, sugar, egg and molasses until well blended.
Combine the dry ingredients together – flour, baking soda and the spices.
Stir the flour/spice mixture into the wet mixture to form a dough.
Then, CHILL the dough for a few hours – this is different than Betty Crocker’s recipe.
After the dough is chilled, preheat oven to 375 (BC says 350).
Roll dough into balls (maybe about ¾ to 1”) and then roll in the granulated sugar.
One dozen cookies per sheet as they do spread while baking.
Bake 10-12 minutes, depending upon how crispy/soft you like them and your oven. And never bake more than one tray at a time. No idea why – just Mom C advice.
Let them cool slightly on the tray before removing to wire racks to completely cool.
Makes about three dozen cookies.
We highly recommend you take a bite of a warm cookie and then drink some milk. We love that little meeting of cold milk and warm cookie in our mouths. If you make these, let us know! They’re great with ice cream, too, of course.

There is nothing like a good molasses crinkle cookie: just the right amount of snap with a chewy center. These were one of my grandma's all-time favorites with the recipe coming from Great-Grandma. The only update is amping up the ginger. These are a perfect Christmas cookie!

- 1/3 cup candied ginger, chopped
INSTRUCTIONS
Cream the shortening and brown sugar together until fluffy. Add molasses and egg and mix well to completely incorporate.
In a separate bowl fitted with a sifting colander, measure flour, baking soda, salt, and spices and sift. Add dry ingredients to the wet and mix just to incorporate. The dough will be dry.
To bake, make balls with a two-ounce cookie scoop. Roll with hands and then roll in turbinado sugar. Place on a parchment-lined baking sheet and top with a pinch of candied ginger. Press ginger in slightly to adhere. Bake at 350°F for 10-12 minutes.
Once done baking, let rest on the pan for a few minutes before transferring to a cooling rack.

One of my all time favorite cookies. There’s lots of spice in this soft, wonderful cookie. It’s hard to eat just one.
Ingredients: vegetable shortening, brown sugar, egg, molasses, baking soda, powdered ginger, cinnamon, cloves, salt, white flour, finishing sugar
