How To make Mock Peanut Brittle
8 c Corn flakes
1 c Peanut butter
1 c White karo
1 c Sugar
Spread corn flakes over large toast pan. Mix karo and sugar in saucepan and bring to a boil. Remove from stove. Add peanut butter and stir till it melts. Pour over cornflakes until well covered and spread thin on wax paper. Let cool. Minnie Lee, LPN (another recipe from my dentist's mother!) Low Carb Sugar Free Almond Brittle
Here is a delicious sweet treat you can make for Santa! It only takes 12 minutes to prepare. This will be a family favorite.
Ingredients
1 cup almonds (whole or sliced) =
¼ cup butter
½ cup Swerve sweetener =
2 tsp. vanilla =
¼ tsp salt
Instructions
Line a 9 x 9 cake pan or 9 pie pan with baking parchment.
Pour your swerve or erythritol, butter, vanilla and 1/4 tsp. salt into a non-stick skillet
Heat over medium heat until all the ingredients are dissolved.
Add the almonds into your mixture.
If using sliced almonds it may feel like 1 cup is a lot but once you add them too your candy mixture they are crunchy and delicious.
Stir your mixture, and bring it to a boil
Boil for 2-3 minutes, it should become a light golden brown.
Remove from the heat.
Carefully pour your almond mixture into your prepared pan.
Spread the almonds our evenly with a spoon.
Allow to set for 1 hour, and then cool it in the refrigerator.
Break into pieces and divide into 8-10 servings.

In this episode of In The Kitchen with Matt I will show you how to make Almond Roca. This homemade almond roca recipe is fairly easy to make with very few ingredients. Almond Roca is essentially an English Toffee that uses almonds, but they are very close to the same. And some people use the names interchangeably. This is a family favorite treat to have during the Holidays, if I can make it you can make it, let's get started!

Ingredients:
1 pound of butter (4 sticks) (450g)
1/3 cup of water (80mL)
2 Tbsp. of light corn syrup (40g)
2 cups of white granulated sugar (450g)
1 cup of almonds (I use 1/2 cup slivered and 1/2 cup roasted)
11.5 ounces of milk chocolate chips (or dark, semi-sweet) (330g)

Sugar substitute = 1/2 cup sugar
1 Tbs sugar free caramel syrup
1/4 tsp vanilla extract

Payday candy bars are my favorite treat these days, so when I saw this recipe, I knew I had to make them. I decided to change it a little and make these in the microwave.
