How To make Cookie Brittle
1/2 cup (125 mL) margarine
2 tsp (10 mL) vanilla
1 tsp (5 mL) salt
3 tblsp (45 mL) granulated sugar replacement
2 cups (500 mL) flour (sifted)
1 cup (250 mL) semisweet chocolate chips
1/2 cup (125 mL) walnuts (chopped fine)
Instructions: ------------- Combine margarine, vanilla, salt and sugar replacement in mixing bowl or food processor; beat until smooth. Stir in flour, chocolate chips and walnuts. Press into ungreased 15 x 10-in. (39 x 25-cm) pan. Bake at 375 degrees F (190 C) for 25 minutes. Remove from oven, score into 2 x 1-in. (5 x 2.5-cm) pieces and cool completely. Break into candy pieces.

Brownie Brittle:
Ingredients:
1 Stick (1 cup) Melted Butter [Vegan? Use Margarine *]
1 cup Granulated Sugar
2 tsp. Vanilla Extract
2 cups All Purpose Flour
1 cup Mini Chocolate Chips
Instructions:
Preheat oven to 350º F.
Cream together sugar, butter, and vanilla in a bowl.
Add flour until well blended. Add chocolate chips.
Spread mixture very thinly onto a cookie sheet lined with parchment paper or a silicone mat.
Bake at 350º F for 20 minutes or until golden.
While cooling, cut into squares, or allow to cool completely before breaking into pieces.
Store in an airtight container.

There are a few steps to this recipe, but overall it’s pretty simple, and once you’ve made the brittle and browned the butter it’s a fairly normal cookie recipe. The cookies have a caramelly, toasty, buttery, nutty flavour. To me they taste of autumn! I really enjoyed them and I hope you do too!

1 Cup Flour
1/4 TSP Baking Soda
1/2 TSP Cinnamon
1/2 Cup Butter
1/2 Cup Brown Sugar
1 Egg, Beaten
1 TSP Vanilla
1 Cup Peanuts Divided (1/2 Cup Finely Chopped, 1/2 Cup Whole)
Set oven to 325. Sift flour, baking soda and cinnamon. In mixing bowl, cream butter and brown sugar. Add flour mixture, mix on low until completely blended. Blend in vanilla and 2 TBS of the egg, save remainder. Add chopped peanuts and dry ingredients, mix well. Spread or pat mixture into 14x10 greased baking sheet. Brush with remaining egg. Sprinkle with whole peanuts and bake 20-25 minutes. Don't overbake. Cut or break into cookies while warm.
