ZUCCHINI 'MOCK' APPLE PIE RECIPE. THEY WON'T KNOW ITS NOT APPLE!!
This mock apple pie is sooooooo good and you will never know it's not made with apples!! This is a great way to use up some of that zuchini if your tired of the same ole same ole... If you make this pie PLEASE let me know how your friends and family reacted lol... Don't tell them and see what they say. They won't lnow!!

Ingredients:
6 cups of diced cooked zuchini
1 cup sugar
1/2 cup brown sugar
1 1/2 tsp cinnamon
1 1/2 tsp cream of tarter
2 TBSP corn starch
1 rsp salt
Directions:
Wash, peel, de-seed, dice and lightly cook 6 cups worth of zuchini
Mix all your dry ingredients with your zuchini and stir well.
Bake at 450 for 15 minutes, lower the temp to 350 and bake for another 35-45 minutes

We grew up with a lot of Depression-era recipes, so we’re familiar with them, but hadn’t revisited this one in quite some time. Given that so many ingredients were off-limits because of how expensive they were, families had to go without a lot of the dishes they were familiar with…until they discovered new ways to work with the ingredients they did have on hand….

Don't know what to do with gigantic extra zucchini? Mock apple pie filling! Part 1
Don't waste all that extra huge zucchini, exactly like apple pie filling, canned prep for hard times.
Mock apple pie filling ingredients
24 c peeled, seeded, sliced large zucchini
4 c lemon juice
6-9 c white sugar
3 c brown sugar
4 1/2 t cream tarter
2 T cinnamon
3/4 t each nutmeg, ground cloves, cardamon, allspice, ginger
1 T vanilla
Cook 15-20 minutes low boil/simmier - pack into hot sterile jars - can 6 pounds 10 minutes pressure cooker

What others ways can we use up all this extra zucchini? I'm always looking for new ideas, and this time around we're going to attempt to make applesauce from zucchini. This is not an approved NCHFP / USDA recipe - this is just me experimenting in my kitchen. If you decide to make this, do so at your own risk. 5-6 pretty large zucchini went into my roasting pan, and in total I ended up adding two jugs of apple juice. It cooked down for a really long time - about 24 hours. Then I ran it through my food processor to break it down even further and seasoned it, as I would normal apple sauce.

Mock Apple Pie (Zucchini Pie)
This recipe video shows you how to make zucchini pie with no crust. When it is done it will taste like apple pie with a nut roll cookie topping. I hope you love it as much as my family does. It disappeared in minutes.
Zucchini Apple Pie Filling Plus More!!
Zucchini can grow and get out of control at some point in the summer months. This recipe on how to make zucchini apple pie filling is great!! It's a new recipe for me, and it turns out to be a win!!
24 Cups of Zucchini - seeded and skins removed -cut into chunks
2 cups - lemon juice
1/2 cup apple juice
2 3/4 cups white sugar
1 1/2 cups brown sugar
4 1/2 tsp cream of tartar
2 TBL cinnamon
3/4 tsp nutmeg, cloves, allspice, and ginger
1 TBL of vanilla
Bring to a boil and simmer for 10-15 minutes. I made a cornstarch slurry and added at the end to thicken up the sauce. Let it cool down and then place in freezer bags. I placed my freezer bags into a large pan in case it leaked. Once cooled, then you can freeze.
