How To make Mocha Chocolate Chip Cheesecake
2 1/4 c Graham Cracker Crumbs
12 oz Seimi Sweet Choc.Chips *
2 1/3 c Butter, melted **
1/2 c Milk
4 t Instant Coffee
1 ea Env. Unflavored Gelatin
16 oz Cream Cheese, Softened
14 oz Sweetened Condensed Milk
2 c Heavy Cream, Whipped
1 c Chocolate Chips *
* Cholcolate chips should be the Little Bits chocolate Chips and they are to be devided into 2 separate cups. Set aside. ** Butter is to be melted and then cooled to room temperature. ~-------------------------------------------------------------------------- In large bowl, combine grham cracker crumbs, 1 cup little bits chocolate chips and butter, mix well. Pat firmly into 9-inch springform pan, covering bottom and 2 1/2-inches up sides. Set aside. In small saucepan, combine milk and instant coffee, sprinkle gelatin on top. Set aside for 1 minute. Cook over low heat, stirring constantly until gelatin and coffee dissolve. Set aside. In large bowl, beat cream cheese until creamy. Beat in sweetened condensed milk and gelatin mixture. Fold in whipped cream and remaining 1 cup of little bits chocolate chips. Pour into prepared pan. Chill until firm (about 2 hours). Run knife around edge of cake to separate from pan, remove rim. Makes 1 9-inch Cheesecake

Chocolate Mocha Cheesecake with Michael's Home Cooking
Chocolate Mocha Cheesecake has a hint of coffee flavor. It is so smooth and velvety. I hope you try this soon!
Ingredients:
Chocolate Animal Crackers (1 and 1/2 cups)
1/2 stick butter (2 ounces)
3 packages cream cheese (24 ounces total)
1 cup sour cream (8 ounces)
1/2 cup brown sugar
1/2 cup white sugar
3 eggs
1 and 1/2 cups semi-sweet chocolate chips (7 ounces)
1/4 cup strong coffee OR heavy cream
1 Tablespoon vanilla extract
Topping:
3/4 cup semi-sweet chocolate chips (5 ounces)
Makes 12 servings
Bake @ 350F for 60 minutes, then turn oven off and crack the door open and leave the cheesecake in the oven for one more hour. Remove from oven and allow to come to room temperature, then apply the topping if you choose to make it.
Your pan should be 22 to 23 centimeter size or close to that or 9 inches.

Cookies-and-Milk Cheesecake Brownie Bars
Triple-layered lusciousness, all in one bar: Brownies on the bottom, creamy cheesecake in the middle and tender chocolate chip cookies on top.
Recipe:
Ingredients
Brownie Base
1 box (1 lb 2.3 oz) Betty Crocker™ fudge brownie mix
1/2 cup vegetable oil
3 tablespoons water
2 eggs
Cheesecake Layer
2 packages (8 oz each) cream cheese, softened
3/4 cup sugar
2 eggs
1 teaspoon vanilla
Chocolate Chip Cookie Layer
1 pouch (1 lb 1.5 oz) Betty Crocker™ chocolate chip cookie mix
1 tablespoon Gold Medal™ all-purpose flour
1/2 cup butter, softened
1 egg
Steps
1. Heat oven to 350°F. Grease bottom only of 13x9-inch pan with shortening or cooking spray.
2. In large bowl, mix Brownie Base ingredients until well blended. Spread in pan. Bake 20 minutes.
3. Meanwhile, in large bowl, beat cream cheese with electric mixer on medium speed until smooth. Add sugar; beat until blended. Add 2 eggs and vanilla; beat just until blended. In medium bowl, stir together chocolate chip cookie mix and flour. Add softened butter and 1 egg; stir until soft dough forms.
4. Spread cheesecake layer mixture over hot brownie base. Drop teaspoonfuls of chocolate chip cookie dough over cheesecake layer.
5. Bake 35 to 40 minutes or until cookie is golden brown. Cool 1 hour. Refrigerate at least 3 hours before cutting and serving. Cut into 6 rows by 5 rows. Store covered in refrigerator.
