How To make Chocolate Chip Cookie Dough Cheesecake
-Dorothy Cross TMPJ72B 1 1/2 c Finely crushed chocolate
-wafer cookie crumbs -(about 30 cookies) 1 c Sugar
1/4 c (1/8 lb.) melted butter
-or margarine 2 pk (8 oz. each) cream
-cheese or neufchatel; -cut into chunks 1 c Regular or light sour cream
3 Large eggs
1 t Vanilla
-COOKIE DOUGH -TOPPING (RECIPES FOLLOW) Mix crumbs, 2 T sugar, and butter; press firmly over bottom and 1/2-inch up sides of a 9-inch cheesecake pan with removable rim. Bake in a 350 degree oven until slightly darker color, about 8 minutes. In a food processor or with a mixer, whirl or beat remaining sugar with cheese. Add cream, eggs, and vanilla; mix well. Pour into crust. Drop cookie dough in 2- tablespoon portions evenly over cake; push dough beneath surface. Bake in 350 oven until cake jiggles only slightly in center when gently shaken, about 40 minutes. Spread topping over hot cake. Let cake cool, then chill until cold, at least 4 hours; serve or wrap airtight up to 2 days. Serves 12 to 16. COOKIE DOUGH: In a bowl, beat to blend 1/4 cup butter or margarine, 1/4 cup firmly packed brown sugar, and 1/4 cup granulated sugar. Stir in 2 tablespoons water
and 1 teaspoon vanilla. Beat in 1/2 cup all-purpose flour and 1 cup semisweet chocolate baking chips or chopped pieces. TOPPING: Mix 1 c regular or light (reduced-fat) sour cream, 2 teaspoons sugar, and 1 teaspoon vanilla. COMMENTS: Soft, creamy lumps of chocolate chip cookie dough, made without egg, are a tantalizing surprise in this smooth cheesecake. An amazingly good recipe with the perfect combination of cheesecake, crispy cookies and yummy cookie dough.

Except I used a crushed cookie crust and more cookie dough to make a ring around the top.
2 pkg. (8 oz or 250g each) Cream Cheese, softened (room temperature, smiling cream cheese is optional, but does make the final result taste better).
1/2 cup sugar
1/2 tsp. vanilla
2 eggs
About 1.5 cups of prepared or refrigerated chocolate chip cookie dough, divided
1 package of chocolate chip cookies (300g or 10 oz about 18 cookies)
2 tbsp melted butter
CRUST:
Crush the cookies and blend them with the melted butter, press the mixture into the bottom of a springform pan that has been lightly greased. The springform pan I used was 9 inches in diameter.
FILLING:
Preheat oven to 350°F. Beat cream cheese, sugar and vanilla in large bowl with electric mixer on medium speed until well blended. Add eggs; mix just until blended. Remove 1/2 cup of the dough; drop by half teaspoonfuls into batter. Stir gently until well blended.
POUR into crust. Top with level teaspoonfuls of the remaining 1/4 cup cookie dough and add more cookie dough around edge if desired.
BAKE 40 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight. Store leftover cheesecake in refrigerator.
Garnish with chocolate syrup or ganache if desired.

NOT SHOWN IN VIDEO, BUT IMPORTANT.
I placed an 8x11 baking dish with about 1 inch of warm water in the oven at the same time as I put the cheesecake in to be baked. I put the pan of water on the oven rack underneath the cheesecake. I have learned that this may help prevent your cheesecake from cracking. This was the first full sized cheesecake I have EVER made that did NOT crack and think the water pan was the reason.
If your cheesecakes usually crack try it!

No Bake Cookie Dough Cheesecake | The Recipe Rebel
PRINTABLE RECIPE & NUTRITION INFO:
Crust
▢½ cup melted butter
▢300 grams chocolate sandwich cookies (about 25 cookies)
Cookie Dough*
▢1¼ cup brown sugar
▢½ cup softened butter
▢2¼ cups all-purpose flour (heat treated – see notes)**
▢5 tablespoons milk
▢1 teaspoon vanilla
▢½ teaspoon salt
▢¾ cup mini chocolate chips
Cheesecake
▢750 grams cream cheese (24 oz or 3 packages)
▢1 cup powdered sugar
▢1 teaspoon vanilla
▢1 cup heavy whipping cream 35% cream
▢homemade whipped cream for serving
Instructions
Crust
Combine melted butter and cookies in a food processor and process until smooth and a ball forms.
Press into a 9″ Springform pan (or a pie plate or square pan works just fine, too!).
Cookie Dough
In a medium bowl, stir together sugar and softened butter with a spoon or beat with an electric mixer. Add flour, milk, vanilla and salt and stir until a dough forms, adding a little more milk if needed. Stir in chocolate chips.
Set in the refrigerator to chill.
Cheesecake
In a large bowl, beat together cream cheese until smooth. Add sugar and vanilla and beat until completely smooth.
In a separate bowl, whip cream with an electric mixer until stiff peaks form. Add half to the cream cheese mixture and beat on low until combined. Add remaining whipped cream and beat on low just until combined.
Divide the cookie dough in thirds. Roll 1 third into a circle the size of your pan and lay on top of your crust (I do this between 2 sheets of wax paper and it works perfectly!). Roll remaining ⅔ into small balls. Stir half of the cookie dough balls into the cheesecake, and set the remaining in the fridge for garnish.
Spread the cheesecake mixture over the crust and set in the refrigerator to chill until set, at least 6 hours.
Remove cheesecake from pan and garnish with whipped cream if desired and extra cookie dough balls. Serve and store leftovers in the refrigerator for up to 5 days.
