How To make Miso Barbequed Tofu
1 tb Arrowroot powder
-OR- cornstarch 1/2 c Water
1/4 c Barley miso
1/2 c Mirin
1/4 c Plum sauce
1 tb Brown sugar
4 Atsu age cakes
12 sm Japanese eggplants
8 Whole shiitake mushrooms
--(fresh, not dried) 1 bn Whole green onions
In a small saucepan, whisk together arrowroot and water. Heat and add miso, mirin, plum sauce and brown sugar. Stir and continue cooking until thickened, about 5 minutes. Remove from heat and let cool. Slice each eggplant in half lengthwise and trim ends from green onions. Wipe shiitake mushrooms with a damp towel to remove dirt. Set aside. Brush grill with oil to prevent sticking. Cook tofu over medium-hot coals 7 to 8 minutes each side until edges start to crisp. While tofu grills,
place whole green onions, shiitake mushrooms and eggplant (cut-side down) on grill and cook 5 minutes. Turn and baste with miso sauce. Continue cooking 5 to 8 minutes until eggplant can be pierced easily with a fork. Serve with extra sauce. 5 Minute Miso Sauce Makes Everything Better (Miso Paste Recipe)
So, you've made miso soup and miso ramen and you have a container of miso at the back of your fridge gathering dust. What is a resourceful cook to do? I'll tell you: make this five minute miso sauce that makes literally everything it touches better. Plus, you can make this sauce with ingredients you already have in your kitchen!
Recipe for 2 servings of miso sauce:
Mix together in a small bowl and set aside:
3 tablespoon (45 gram) water
One tablespoon (20 gram) miso paste
Two tablespoon (45 gram) fruit jam, jelly or preserve
Heat oil in a small pan over medium heat and add:
1/2 teaspoon (3 gram) garlic, grated
1/2 teaspoon (3 gram) ginger, grated
Stir until fragrant
Add miso mixture to pan and heat until thickened, 2-3 minutes
Turn off heat and add:
2 tablespoon (28 gram butter)
Swirl pan until butter is emulsified
Season with a squeeze of lemon juice
Taste and adjust seasoning.
Strain through fine mesh strainer such as a chinois or tamis for a smoother sauce.

Grilled Tofu with Miso Sauce(Serves 2)
<Ingredients >
▶︎1 Firm Tofu (300g )
▶︎80g Beef mince
▶︎3 Brined green olives -finely chopped- (10g)
▶︎3 tbs Miso paste
▶︎3 tbs Cooking Sake
▶︎1.5 tbs Sugar
▶︎small amount of Pink peppercorns
<Instructions>
1 : Cut firm Tofu into 6 equal pieces. Place on paper towels for 10 minutes to drain.
2: Make the Miso sauce. Cook ground beef. When it is cooked, add green olives, Miso, cooking Sake, sugar and cook over low heat (600W 150-170℃) until warm.
3: Put the firm Tofu in a non-stick pan and heat over medium heat (800W 170-180℃) until browned and warm inside.
4: Put the firm Tofu on a plate and top with Miso sauce. Sprinkle with pink peppercorns and serve.
*1 tbs=15ml / 1 tsp=5ml
*The temperature setting of the induction cooker is for reference only.
