½ tsp salt or to taste
½ tsp black pepper or to taste
1 cube chicken bouillon
½ cup all-purpose flour
2 cups chicken broth low sodium
1 cup milk
1 cup frozen peas
1 cup pimentos chopped
3 cups cooked chicken chopped
1 tbsp parsley for garnish

Chicken a la King | Quick-Fix Comfort Food
Chicken à la king sounds fancy, but this easy chicken dinner is downright comforting and SO simple to make! It comes together quickly on the stovetop with lots of yummy veggies, chopped chicken, and a creamy to-die-for sauce. You can serve it over pasta, rice, or my favorite homemade biscuits!
It's a quick dinner-time recipe your family will absolutely love. You don't need any canned condensed soups and you fruit can forget the frozen TV dinner renditions. This easy chicken à la king recipe is where it's at! Weighing in at less than 30 minutes, start to finish, this is a family-friendly dinner you just can't beat!

Chicken a la king ingredients:
6 tablespoons unsalted butter
1 red bell pepper seeded and finely diced
½ yellow onion finely diced
2 ribs celery finely diced
1 (8-ounce) package sliced button mushrooms, roughly chopped
2 teaspoons Kosher salt, separated
1 teaspoon black pepper, separated
½ cup all-purpose flour
2 ¼ cup unsalted chicken broth
½ teaspoon garlic powder
½ teaspoon paprika
½ cup frozen peas
1 cup heavy cream
2 cups diced or cubed cooked chicken
How to make chicken a la king:
Add the butter to a large skillet (with a fitted lid) or a Dutch oven over medium-high heat. As soon as the butter has melted, add the diced bell pepper, onion, celery, mushrooms, 1 teaspoon Kosher salt and ½ teaspoon black pepper. Stir the mixture until evenly coated in the butter. Reduce the heat to medium, cover and cook for about 6 minutes -- just until everything has softened.
Sprinkle the flour over the vegetables and stir for about 1 minute. Add the chicken broth one big splash at a time, stirring until completely mixed and smooth after each addition.
Once all of the broth has been incorporated, stir in 1 teaspoon Kosher salt, ½ teaspoon pepper, garlic powder, and paprika. Simmer for 2-3 minutes, or until slightly thickened.
Stir the peas and the cream, and bring to a simmer. Simmer for about 5 minutes more, then stir in the chicken.
Serve over biscuits, rice, or pasta and enjoy!

Chicken A La king Recipe:
Stock:
Chicken (boneless diced) - 500 gms
Celery (diced) - ¼ Cup
Bay Leaf - 2 nos
Carrot (roundels) - 1 no.
Onion (diced) - 1 no.
Salt - 1 tsp
White Pepper Powder - ¼ tsp
Water - 2 ½ Cups
Sauce:
Butter - 2 tbsp
Maida - 2 tbsp
Chicken Stock - 2 Cups
Milk - ½ Cup
Salt - ½ tsp
Preparation:
Butter - 2 tbsp
Egg Yolk - 1 no.
Fresh Cream - ¼ Cup
Button Mushroom (thick slices) - ½ Cup
Capsicum (thinly sliced) - 1 no.
Parsley (dried) - ½ tsp
Cooking Instructions:
1. Combine all the ingredients for the stock, bring to a boil and simmer for 15 mins until the chicken is tender.
2. Strain the stock and set aside. Reserve the chicken dices and the carrots.
3. Whisk the egg yolk and cream to make a liaison and set aside.
4. In a pan, for the sauce, melt butter and add the garlic. Add the maida, cook for 2 mins. Gently whisk in the chicken stock followed by milk.
5. To prepare the final dish, in the prepared sauce switch off the flame and whisk in to create a velvety and rich sauce.
6. Heat butter on a high heat and saute the mushroom and capsicum. Add into the prepared sauce and combine well. Add the carrots and chicken back. Finish with parsley. Serve hot with herbed rice.

I've been eating this for as long as I can remember, this is my Mums Chicken Ala King recipe
An absolute classic! I've been making this chicken ala king for years. The recipe was handed down to me from my mum, who used to make it for me when I was growing up. I’ve always loved the way the sauce sinks into the rice, making every bite taste creamy, savoury and delicious.
It's a great way to use up leftover chicken (or you can use rotisserie chicken).

Ingredients for Chicken Ala King:
▢3 tbsp olive oil
▢12 baby chestnut mushrooms - sliced in half (you can swap for button mushrooms or 5-6 regular-sized sliced mushrooms)
▢1 large onion - peeled and sliced
▢2 tbsp plain (all-purpose) flour
▢280 ml (1 cup + 3 tbsp) hot chicken stock - hot water and a couple of stock cubes is fine
▢200 ml (¾ cup + 1 tbsp) semi-skimmed or full-fat milk
▢½ tsp dried thyme - or a tsp of fresh thyme leaves
▢2 tbsp dry sherry - *carefully measured (too much will make the sauce taste of sherry)
▢¼ tsp salt
▢¼ tsp black pepper
▢2 large cooked chicken breasts - chopped into bite-sized chunks (about 250g/9oz)
To Serve
▢chopped fresh parsley
▢boiled rice or pasta
