How To make Mexican Turkey Rollups
2 1/2 cups Turkey; cooked
cubed
1 1/2 cups Sour cream :
divided
3 teaspoons Taco seasoning mix divided
1 can Cream of mushroom soup :
divi
1 1/2 cups Cheddar cheese shredded
1 small Onion :
chopped
1/2 cup Salsa
1/4 cup Olives sliced
10 Flour tortillas :
7 inches
Lettuce shredded Tomatoes :
chopped
In a bowl, combine turkey, 1/2 cup sour cream, 1 - 1/2 teaspoons taco seasoning, half of the soup, 1 cup of cheese, onion, salsa and olives. Place 1/3 cup filling on each tortilla. Roll up and place, seam side down, in a greased 9 x 13 baking dish . Combine remaining sour cream, taco seasoning and soup; pour over tortillas. Cover and bake at 350 F. for 30 minutes or until heated through. SPrinkle with remaining cheese. Serve with shredded lettuce and chopped tomatoes. Top with additional salsa if desired.

These delicious wraps are so quick and easy to make and can easily be made into a vegetarian meal if you substitute the ground turkey for beans. It's not easy cooking for just one person sometimes but this recipe is the perfect size. Don't worry too much about exact measurements though, cooking really isn't about be exact. These wraps can get a little messy to eat but are definitely worth it! It's around 320 calories for the whole recipe and it's loaded with lean protein and good fat, you can't go wrong. Enjoy!

Turkey Bacon Ranch Roll Ups
8 Oz Cream Cheese
12 Slices of Turkey (or any meat)
1/4 tsp Dill
1/4 tsp Garlic
1/4 tsp Onion
1/4 Cup Chopped Bacon
1/4 Cup Shredded Cheese
Instructions
Put the cream cheese between 2 pieces of plastic wrap. Roll it out until it's about ¼ inch thick. Peel off the top piece of plastic wrap. Lay the slices of turkey on top of the cream cheese.
Cover with a new piece of plastic wrap and flip the whole thing over. Peel off the piece of plastic that is now on the top. Sprinkle the spices on top of the cream cheese. Sprinkle with the bacon and cheese.
Roll up the pinwheels so that the turkey is on the outside. Refrigerate for at least 2 hours. Slice and serve by themselves or on top of low carb crackers or sliced cucumber.
Ham Cream Cheese Roll Ups
8 Oz Cream Cheese softened
12 Slices of Ham Sliced Thickly
12 Pickles
Instructions
Take pickles out of jar so they can get all the juice off of them.
Lay out ham slices and gently spread the cream cheese on the top of it. Use a little at a time so that the meat doesn’t rip.
Place the pickle on top and roll it up.
Place in the fridge for about an hour to let the cream cheese harden a little so it’s not annoying to cut.
Slice in about 3/4 pieces and enjoy
