How To make Mexican Meatloaf
1 lb Lean ground beef
1 lb Ground veal
3/4 c Pitted black olives,
-coarsely chopped 1/2 c Yellow cornmeal
2 lg Eggs, lightly beaten
1 md Onion, chopped
1/4 c Pickled sliced jalapenos,
-chopped 2 lg Garlic cloves, chopped
1 ts Best quality chilli powder
1 ts Dried oregano
1 ts Salt
Seasoned with cornmeal, chiles, and olives, this is a spicy,Southwestern rendition of meatloaf. Hot pepper jelly makes a delicious accompaniment, or brush on the jelly while it's baking to glaze the meatloaf. Preheat oven to 350F. Combine all ingredients in large bowl (hands work best for mixing) Gently pack mixture into greased 9x5x3 inch loaf pan. Bake for 1 1/4 hours or just until cooked through. Serves 8. Betty's Spicy Taco Meatloaf
Betty demonstrates how to make Taco Meatloaf. This meatloaf uses a Taco Seasoning mix from Betty's Kitchen, or you may used a packaged taco seasoning mix. Many thanks to Arritta Morris for the recipe.
Taco Meatloaf
1 egg
½ cup sour cream
1/3 cup salsa
3 to 4 tablespoons taco seasoning (from Betty's Kitchen—or a packaged variety)
salt, to taste
1 cup crushed tortilla chips
½ cup finely-shredded Cheddar cheese
1 ½ pounds ground beef
In a large bowl, beat the egg using an electric mixer on medium speed. Add all other ingredients, and stir mixture to combine. Form into a loaf and place in standard-sized loaf pan. (I lined the loaf pan with aluminum foil, folding it over the top.) Place the prepared, uncooked meatloaf in the refrigerator for 1 hour to let the flavors blend with the crushed corn chips. Bake at 350 degrees (F) for 1 hour, opening up the aluminum foil for the last 15 minutes. Remove cooked meatloaf from oven. Transfer meatloaf to a cutting board and let it rest 5 minutes. Slice as desired and serve on a nice platter. This meatloaf is great served with shredded lettuce, chopped tomatoes, and sliced avocados. I hope you love it! --Betty

Mexican Meatloaf | Meatloaf With Chorizo And Salsa | John Eats Cheap
John likes putting a spin on traditional meatloaf, so he tried out a Mexican twist. Delicious chorizo, tortilla chips and salsa spice up a weeknight meal.
Mexican Meatloaf
1 1/4 pounds ground beef
6-Oz Chorizo
1 tsp salt
1/2 tsp black pepper
1 tsp fajita (or taco) seasoning
1 egg
1/4 cup salsa
1/2 cup shredded cheese
1/2 cup crushed corn chips
MIX
Form in loaf pan
Top with salsa
Bake at 400° for 1-hour
